Make It Vegetarian
To make this meal vegetarian use vegetable broth instead of chicken broth. For the spaghetti sauce, I like to use Prego or Ragu since they are inexpensive and frequently on sale. But you can use any brand.
Don’t Overcook The Tortellini
Be sure not to overcook the tortellini. You actually want to undercook them some, especially if you are not eating the soup right away. They will continue to cook as the soup sits.
Easy Tortellini Soup is simple, comforting, and delicious. Sprinkle some fresh Parmesan cheese on top and serve with some crusty bread.
What Is The Best Bread To Serve With Tortellini Soup?
Garlic Bread or Bruschetta go great with any soup with pasta in it. It also goes great with Air Fryer Cheesy Crescent Rolls or Bacon Stuffed Cheesy Garlic Rolls. A green salad with Creamy Parmesan Dressing is another great addition.
Make It Spicy
This soup already has a little spiciness from the addition of 1/2 teaspoon of crushed red pepper flakes. Serve with hot sauce if you want it spicier. Reduce the crushed red pepper flakes to 1/4 teaspoon if you don’t want it spicy.
Hot To Store Easy Tortellini Soup
This soup is best eaten the day it is made but can be kept in an airtight container in the refrigerator for a few days. The tortellini will soak up a lot of the liquid overtime.

Easy Tortellini Soup Recipe
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 4 cups chicken broth
- 24- ounce jar of spaghetti sauce
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 12- ounce bag mixed vegetables, (carrots, peas, green beans, corn)
- 1 cup water
- 1/2 teaspoon red chili flakes
- 1 (9-ounce) package fresh tortellini, in refrigerator section of store
- Parmesan Cheese
Instructions
- In a large pot add 1 tablespoon olive oil and heat over medium-high heat.
- Add onion and saute 3-5 minutes. Add garlic and saute 1 additional minute.
- Add remaining ingredients (except tortellini and Parmesan) and simmer over low heat for 20 minutes.
- Add tortellini and cook for 1 minute. Turn heat off. Tortellini will continue to cook in the warm liquid.
- Ladle into bowls and top with grated Parmesan Cheese.

Super creamy, easy and delicious soup!
It has been freezing here lately, and by freezing I mean 70 degrees but it is cold me to! All I’ve wanted to do is curl up with a big bowl of soup and sit until a blanket. This soup looks perfect! I love that it is packed with so much goodness so it is probably really filling too!
