Mini BBQ Cheddar Meatloaves

Individual-Sized Meatloaves

I love making individual sized meatloaves. The best thing about them is they cook up in less than half the time of a full-sized meatloaf. So easy to make for a weeknight meal.

How To Prevent Meatloaf From Being Dry

  • Don’t use ground beef that is too lean. You want some fat content to keep it juicy.
  • Don’t overmix. Just gently mix the ingredients together until everything is evenly distributed. Overmixing will make for a tough meatloaf.
  • Don’t overcook. These mini meatloaves do not need long to cook, only about 20 minutes.

Type Of BBQ Sauce To Use

You can use any BBQ Sauce you like best. A little gets mixed into the meatloaf for flavor and the rest gets brushed on top as a glaze. I like to use one that is both sweet and spicy.

Why No Salt In Ingredients?

The bacon, cheese, Worcestershire sauce, and BBQ sauce will all add salt so you shouldn’t need any extra. You can add a pinch to the meatloaf mixture if you like highly salted foods.

Storage

Leftovers will keep in an airtight container in the refrigerator for 4 to 5 days.

Ingredients

  • 3 slices bacon
  • 1/2 cup diced onion
  • 1 pound ground beef
  • 1 large egg, lightly beaten
  • 1/4 cup panko crumbs
  • 1 tablespoon Worcestershire sauce
  • 1/4 to 1/2 teaspoon black pepper
  • 1/2 cup BBQ sauce, divided
  • 1 cup shredded cheddar cheese

Instructions

  • Cook bacon in a nonstick skillet until crispy. Remove and set aside.
    Leave the grease in the skillet and add the onion. Cook over medium heat for 4 to 5 minutes to soften. Let cool.
  • Preheat oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil. Spray lightly with cooking spray.
  • In a large bowl, combine ground beef, egg, Panko crumbs, Worcestershire sauce, pepper, 2 tablespoons BBQ sauce, cooked onion, and cheddar cheese.
    Crumble the bacon and mix it in.
  • Shape into 4 ovals patties on the prepared baking sheet. Spoon the remaining bbq sauce on top.
  • Bake for 18 to 20 minutes.
