How To Make Peach Icebox Cake

  1. Beat heavy cream until stiff peaks form.
  2. Beat cream cheese, powdered sugar, vanilla extract and almond extract until smooth.
  3. Fold whipped cream into cream cheese mixture.
  4. Place a layer of graham crackers in the bottom of a 9-inch baking dish.

  5. Spread 1/3 of cream cheese mixture on top followed by a layer of peach slices.

  6. Repeat with another layer of graham crackers, cream cheese mixture and peach slices.
  7. Repeat again and then refrigerate for at least 4 hours before serving.

Recipe Tips

  • Use ripe, but not overly ripe peaches. You want them still a little firm and not to soft.
  • Chill your mixing bowl and beaters before whipping the cream for the best volume.
  • Beat cream cheese until completely smooth before folding in the whipped cream.
  • Refrigerate for at least 4 hours, but overnight is even better. The graham crackers become wonderfully soft and cake-like.
  • Use honey graham crackers if cinnamon aren’t available.
  • Garnish with fresh mint just before serving for a beautiful finishing touch.

Ingredients

  • cups heavy cream
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 6 to 7 peaches, peeled and sliced
  • 15 to 18 cinnamon graham crackers
  • fresh mint for garnish, optional

Instructions 

  • Using a chilled bowl and beaters, beat heavy cream until stiff peaks form.
  • In a separate large bowl, beat cream cheese, powdered sugar, vanilla extract, and almond extract until smooth.
  • Add ⅓ of the whipped cream to the cream cheese mixture and fold it in.
    Add another ⅓ and fold it in until combined. Fold in the remaining whipped cream.
  • Spread a thin layer of cream cheese mixture on the bottom of a 9-inch square baking dish.
  • Arrange a single layer of graham crackers in the baking dish. This should take 5 graham crackers. Break one of them into pieces to completely cover.
  • Spread ⅓ of the cream cheese mixture on top of the graham crackers.
  • Arrange a single layer of peach slices on top.
  • Repeat with another layer of graham crackers, pushing down on them slightly.
  • Top with another layer of cream cheese mixture and peach slices.
  • Finish with final layer of graham crackers, the remaining cream cheese mixture and peach slices.
  • Cover and refrigerate for at least 4 hours before serving.
  • Cut into squares and garnich with fresh mint if desired.
