Fresh peaches shine in this easy Peach Icebox Cake! Sweet, ripe peaches are layered with a luscious vanilla cream filling and cinnamon graham crackers that transform into soft, cake-like layers as they chill. This refreshing no-bake dessert is simple to make ahead and is guaranteed to be a hit at every summer barbecue, picnic, or family dinner.
Using a chilled bowl and beaters, beat heavy cream until stiff peaks form.
In a separate large bowl, beat cream cheese, powdered sugar, vanilla extract, and almond extract until smooth.
Add ⅓ of the whipped cream to the cream cheese mixture and fold it in.Add another ⅓ and fold it in until combined. Fold in the remaining whipped cream.
Spread a thin layer of cream cheese mixture on the bottom of a 9-inch square baking dish.
Arrange a single layer of graham crackers in the baking dish. This should take 5 graham crackers. Break one of them into pieces to completely cover.
Spread ⅓ of the cream cheese mixture on top of the graham crackers.
Arrange a single layer of peach slices on top.
Repeat with another layer of graham crackers, pushing down on them slightly.
Top with another layer of cream cheese mixture and peach slices.
Finish with final layer of graham crackers, the remaining cream cheese mixture and peach slices.
Cover and refrigerate for at least 4 hours before serving.
Cut into squares and garnich with fresh mint if desired.

Cover tightly and store in the refrigerator for up to 3 days. Freezing isn't recommended.
