Cheesy Dorito Chicken Casserole

If your family likes the flavor of Mexican food but is a little tired of taco night, this comfort food casserole is just the thing to try. It’s perfect for a potluck or having friends over.  Cheesy Dorito Chicken Casserole really feeds a crowd and it’s pretty much an all in one meal.

Quick and Easy Recipe

This is pretty much a dump and go recipe. You do need to saute the onion briefly to soften it, but then you just mix all the ingredients together. Put the mixture in a 9X13-inch pan, layering it with crushed Dorito chips and shredded cheese. Just 30 minutes in the oven and you’re ready to eat.

Crushed Doritos

The Dorito chips add a crunchy texture and bold flavor to this easy chicken casserole. There are so many great flavors of Doritos available. Instead of Nacho Doritos try using Cool Ranch, Flamin Hot Nacho, or Salsa Verde.

What To Serve With Chicken Dorito Casserole?

This creamy casserole goes great with some Spanish rice, Poblano and Corn Queso, a Southwestern Salad with Jalapeno Lime Vinaigrette, or Slow Cooker Spicy Pinto Beans.

Recipe Notes For Cheesy Dorito Chicken Casserole

  • Most of the spice comes from the 2 cans of Rotel tomatoes. Use hot Rotel tomatoes if you want it really spicy, regular for a little kick, and mild Rotel if you don’t want it spicy.
  • Use rotisserie chicken to make this meal a breeze to make.
  • Ranch Doritos can be used instead of Nacho.
  • Add 1 cup of canned corn for more flavor.

Ingredients

  • 1 tablespoon butter
  • 1 medium onion, diced
  • 4 ounces cream cheese, cut into chunks
  • 4 cups cooked and shredded chicken,, I use a rotisserie chicken
  • 2 (10.75-ounce) cans condensed cream of chicken soup
  • 2 (10-ounce) cans Rotel tomatoes
  • 1 cup black beans
  • 1 tablespoon Chili powder
  • 1 teaspoon ground cumin
  • 1 regular size bag nacho Dorito chips
  • 2 cups shredded Mexican cheese

Instructions 

  • Preheat oven to 350 degrees. Melt butter over medium heat in a large skillet. Add onion and cook until soft.
  • Add cream cheese,chicken, soup, tomatoes, black beans, chili powder, and cumin.
  • Stir until cream cheese is melted and everything is blended together.
  • Add 1/3 of Doritos into a lightly greased 9×13-inch baking dish. Pour 1/2 of chicken mixture on top and spread it evenly. 
  • Top with 1/2 the shredded cheese and then remaining chicken mixture.
  • Finish off with remaining Dorito chips and shredded cheese. Bake for 30 minutes and serve.

Notes

Use mild Rotel tomatoes if you don’t want it spicy. Regular Rotel plus the chili powder gives it a fair amount of kick. Use hot Rotel if you want it really spicy.

    So good. Everyone loves it. I’ve made it twice, shared with a friend, and am taking to a pot luck. Tonight I tried it with more black beans instead of chicken. That’s delicious, too.

    I made two of these! I halved the recipe and did one with Nacho Cheese and the other with Cool Ranch Dorito’s. I also used sour cream (next time I’ll do cream cheese, but I didn’t have any on hand). I found the Dorito’s got soft and mushy. On the bottom layer, I liked it this way. It reminded me of tamales. On the top though, it just seemed like stale chips. I did find that if you bake the dish for a shorter time (15-20 minutes), the top chips stay crispier. Next time, I might save some of the chips and add them after the dish comes out of the oven.q

      Try not assembling until right before putting in oven my first time it was mushyish on the bottom layer … this time will assemble last minute, use chili beans rather than black beans. Cut recipe in half because this feeds a bunch and I will use for 2 dinners for 2 and one lunch! Yummy!

      I did doritos shredded cheese chicken mix shredded cheese, dorito to make sure the doritos don’t touch the mixing
