Oh how I love a fresh, tender muffin to start the day. I especially love Carrot Zucchini Muffins and Banana Chocolate Chip Muffins. But when it comes to the perfect muffin for fall, nothing beats these Apple Spice Muffins.
How To Make Apple Spice Muffins
- Preheat oven to 350 degrees and line a muffin tin with paper liners or spray well with cooking spray.
- Prepare Dry Ingredients. Whisk them together in a bowl. Set aside.
- Cream Butter and Sugar. Using an electric mixer with a paddle attachment, beat the butter and sugar until light and fluffy.
- Add sour cream, vanilla, and eggs and beat just until combined
- Add flour mixture, alternating with buttermilk (Mix as little as possible at this point.)
- Add Apples. Gently fold in both the diced apple and the grated apple.
- Divide batter between muffin cups.
- Make streusel and sprinkle on top.
- Bake for 26 to 28 minutes.
- Make glaze. Drizzle on top.
How To Serve
These muffins are a great breakfast on the go, pair well with coffee or make a wonderful afternoon snack.
Recipe Tips
- I grate the apple on the large holes of a box grater.
- Be sure you are using fresh baking powder and baking soda. Once opened, only keep for about 6 months.
- Only fill the muffin cups about 3/4 full.
- Avoid overmixing the batter.
- Don’t bake them too long or they will be dry. Insert a toothpick in the center. It should come out clean or with just a few crumbs attached.
- Cool in the pan for 5 to 10 minutes and then remove to a rack to cool completely.
Type Of Apple To Use
My first choice is Gala, but Granny Smith would also work well, as would Honeycrisp. You want an apple that is not too sweet and that will be firm enough that it doesn’t turn to mush in the oven.

Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.

- ¾ cup finely chopped Gala Apple
- ¾ cup grated Gala apple

- ⅓ cup all-purpose flour
- ⅓ cup old-fashioned oats
- ⅓ cup packed light brown sugar
- ¼ cup chopped pecans
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 3 tablespoons unsalted butter, softened
Glaze
- 1 cup powdered sugar
- 2 to 3 tablespoons heavy cream

- Preheat oven to 350 degrees and either line a 12-cup muffin tin with paper liners or spray well with cooking spray.
- Whisk together first 5 ingredients in a medium bowl. Set aside.
- Place butter, granulated sugar and brown sugar in the bowl of an electric mixer fitted with a paddle attachment.Beat until light and fluffy.
- Add sour cream, vanilla and eggs and beat just until combined.
- Add flour mixture to mixer, alternating with buttermilk, with mixer on LOW.
- Fold in diced and grated apples.Divide batter evenly between the 12 muffin cups.
- In a small bowl, stir together all streusel ingredients. Sprinkle on top of batter.
- Bake for 26 to 28 minutes. Cool.
- In small bowl, whisk together the glaze and drizzle over muffins.
