Apple Spice Muffins
These Apple Spice Muffins are full of grated apple and apple chunks for double the apple flavor. They are topped with a delicious cinnamon-pecan streusel and an easy the glaze. Such wonderful fall muffin.

sour cream

finely chopped Gala Apple

grated Gala apple
Streusel

all-purpose flour

old-fashioned oats

packed light brown sugar

Glaze

powdered sugar

Instructions
Preheat oven to 350 degrees and either line a 12-cup muffin tin with paper liners or spray well with cooking spray.
Whisk together first 5 ingredients in a medium bowl. Set aside.
Place butter, granulated sugar and brown sugar in the bowl of an electric mixer fitted with a paddle attachment.
Beat until light and fluffy.
Add sour cream, vanilla and eggs and beat just until combined.
Add flour mixture to mixer, alternating with buttermilk, with mixer on LOW.
Fold in diced and grated apples.
Divide batter evenly between the 12 muffin cups.
In a small bowl, stir together all streusel ingredients. Sprinkle on top of batter.
Bake for 26 to 28 minutes. Cool.
In small bowl, whisk together the glaze and drizzle over muffins.
