Ingredients

  • 4 bacon strips
  • 2 sweet onions, halved and thinly sliced
  • 1/4 teaspoon sugar
  • 1/4 teaspoon sea salt
  • 1 tablespoon dry sherry
  • 1/4 teaspoon tabasco
  • 1/2 teaspoon chopped fresh thyme
  • 1 cup shredded Gruyere Cheese
  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1/4 teaspoon freshly, ground black pepper

Instructions 

  • Preheat oven to 400 degrees.
  • Cook bacon in a large nonstick skillet. Remove to a paper towel lined plate to cool. Crumble.
  • Add onions, sugar, and salt to bacon fat in the skillet and cook over medium-high heat for about 5 minutes. Reduce heat to medium and cook, stirring often, until onions turn a deep golden brown color. This can take as long as 20 minutes. If onions start to burn, turn heat down to medium-low.
  • Add sherry and cook 1 minute. Stir in thyme and tabasco. Remove from heat.
  • Mix together sour cream and mayo in a medium bowl. Add crumbled bacon, cheese, onion mixture, and black pepper. Mix together well and transfer to a 2-cup baking dish.
  • Bake 20 minutes, or until bubbly and golden brown on top.

    This is one of our favorites. Have made this twice, making again this weekend. Guests go crazy over this dip and will say “Who made this dip, amazing!” We have put this on barbecued burgers. Takes your burger to a whole new level. I have left out the sherry because I didn’t have any. Still turned out fabulous! Thanks for sharing this delicious dip!!!

    Can I substitute sherry vinegar for sherry?

      Sherry vinegar is very acidic whereas sherry has a somewhat sweet flavor. You can leave the sherry out and it will still be good. Or just a little splash of sherry vinegar might taste good, but I would go really easy with it.

      The best way to do it would be to find a caramelized onion soup recipe and then melt gruyere cheese on top and sprinkle with crumbled bacon.

    Would love to try this for Christmas evening. Have you ever made it (or any parts of it) in advace?

      I’ve cooked the onions in advance, but it would be fine to get everything prepared and mixed together a day in advance and refrigerate it. Then bake it just before serving. You may need to add about 5 minutes to the bake time since it will be cold.

    I made this as an appetizer for Thanksgiving. I didn’t remember to pick up sherry, so I used balsamic vinegar instead. It was absolutely delicious! I got many compliments on this dip, it is a keeper.

    This dip is a blue ribbon winner. I made it for a dip contest at work today and took home the first place award out of 16 contestants! In order to have it hold up for the duration of the contest, I put it in a slow cooker, decreased the sour cream and mayo a tad and added cream cheese. I can’t wait to give it a try in the oven though. Thank you for sharing this recipe!
