How To Make Bacon Wrapped Maple Glazed Pork Loin

The pork loin gets coated in a maple/brown sugar glaze with Dijon mustard, soy sauce, Worcestershire sauce, and cayenne pepper. It is then wrapped in bacon and drizzled with more maple syrup.

Place it in a roasting pan, cover with aluminum foil, and roast for 1 hour. Uncover it, baste it and roast 30 more minutes. Give it one more baste and continue cooking until the bacon if brown and crispy. Broil it for a few minutes if you need to to get it crispy.

The bacon will cook up sweet and crispy and it really helps keep the pork moist. Plus it adds great flavor.

How Long To Cook Pork

How Long it takes your pork to cook will depend on the size and thickness so use the cooking time as an estimate. Pork loin typically takes 20 to 25 minutes a pound. Pork is done when it reaches an internal temperature of 145 degrees F. Use an instant-read thermometer to help you determine when it is done. Overcooked pork will taste dry and tough.

  • You want to use a 4 to 6-pound pork loin for this recipe, NOT pork tenderloin.
  • Be sure to use pure maple syrup and NOT pancake syrup.

Storage

Leftovers can be kept in an airtight container in the refrigerator for 4 days. Reheat in microwave or 350 degree oven.

Ingredients

  • 1 (4 to 6-pound) whole boneless pork loin
  • 1/3 cup packed light brown sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup pure maple syrup, divided
  • 1/2 teaspoon garlic powder
  • 10 bacon slices

Instructions 

  • Preheat oven to 375 degrees.
  • In a medium bowl, whisk together brown sugar, Dijon mustard, soy sauce, Worcestershire sauce, cayenne pepper and 1/4 cup maple syrup.
  • Cut any excess fat off of pork loin. Place pork loin in a roasting pan. Season it with salt and pepper. Sprinkle with garlic powder.
  • Pour brown sugar mixture over pork loin.
  • Wrap with bacon.
  • Drizzle the remaining 1/4 cup maple syrup over the bacon.
  • Cover roasting pan with foil and bake for 1 hour.
  • Remove from oven, baste with the accumulated juices, recover and cook 30 more minutes.
  • Remove foil, baste again and cook uncovered until bacon is crispy, about 20 minutes.

Notes

Be sure to use a pork loin for this recipe and NOT a pork tenderloin.

    i cooked this with a 6.5lb pork loin but I cooked it at 280 for 5 hours. Very good!

    This recipe is very tasting, but it’s so overcooked, the pork has lost its tenderness. Typically pork cooks very fast, within half an hour max.

    Maybe cut the temperature back? Then the last 20 minutes turn on the broiler to crisp up the bacon? I usually season with lemon pepper and onion slices and cook on low heat (280ยฐ ) for about 3 1/2 to 4 hours. Melts in your mouth so this is a new recipe for me. Fingers crossed!

      I used honey instead of maple. Also used fresh garlic instead of powder. Applewood smoked bacon pairs nicely too. As to the comment about about people in the south being overweight…Not all depict that image. 5โ€™8 126 lbs Southern MS proud. We r about food, family, and long lasting table conversations.
