Ground Beef Doritos Casserole is a hearty family casserole with lots of crunch and cheese. Super easy to make for a weeknight meal.

Ground Beef Casserole
I love a ground beef casserole. They are hearty and filling and don’t break the bank. This one features layers of crunchy Dorito chips, gooey melted cheese, and a taco-seasoned ground beef mixture.
Makes about 6 servings.

Ingredients
- Ground Beef– I use 1 1/2 to 2 pounds. I prefer to use lean ground beef. If using a fattier ground beef, be sure to drain off the fat well.
- Onion
- Taco Seasoning– use a “hot” taco seasoning to make this dish spicy.
- Rotel Tomatoes– use “hot” Rotel tomatoes for a spicier dish.
- Black Beans– Pinto beans can be used instead or the beans can be left out.
- Sour Cream
- Nacho Cheese Flavored Doritos– try using Cool Ranch Doritos instead.
- Shredded Mexican Cheese Blend


Toppings
To really take this recipe over the top, top it with your favorite taco toppings. I like shredded iceberg lettuce, black olives, chopped fresh cilantro, diced red onion, pickled jalapeno slices, and diced avocado or guacamole.
Additions and Substitutions
- Use ground turkey or ground chicken in place of ground beef.
- Use Cool Ranch Doritos instead of Nacho Cheese Doritos.

Recipe Tips
Don’t crush the Doritos too small or they won’t have as much crunch.
You will need a 9×13-inch casserole dish to bake this recipe.
How To Store
Leftovers will keep for 3 days in an airtight container in the refrigerator. However, it is best eaten shortly after it is made. The chips will lose their crunch over time. I don’t recommend freezing this casserole.

Ground Beef Doritos Casserole

Ingredients
- 1½ to 2 pounds ground beef
- 1 medium onion, diced
- 2 packets taco seasoning
- ⅔ cup water
- 1 (10-ounce) can Rotel tomatoes with green chilies
- ½ to 1 cup black beans, rinsed and drained
- 1 cup sour cream
- 1 large bag Nacho Cheese Flavored Doritos
- 3 cups shredded Mexican cheese
- chopped fresh cilantro
- black olives, shredded iceberg lettuce, pickled jalapenos, and salsa for serving
Instructions
- Brown and crumble the ground beef in a large nonstick skillet.Drain off the grease.
- Add onion and cook until onion is soft, about 3 minutes.
- Sprinkle taco seasoning over ground beef and add water. Cook and stir until thickened. Remove from heat.
- Stir in black beans and sour cream.
- Preheat oven to 350 degrees and spray a 9×13-inch baking dish with cooking spray.
- Cover the bottom of the baking dish with about 2 cups of crushed Doritos.Top with half the ground beef mixture. Sprinkle half the cheese on top of the ground beef layer.
- Add another 2 cups of crushed Doritos and top with remaining ground beef mixture.
- Finish off with remaining cheese and another 2 cups of crushed Doritos.
- Bake for 25 minutes. Serve with toppings.

When would you add the Rotel tomatoes? At the end? During the same step as the beans and sour cream? The recipe tastes very good but I didn’t realize until I finished the layers that those were never added. Definitely would bring it up another level.
