I love making quiches. They are versatile, so easy to make, and great for using up leftovers.

If you find yourself with leftover holiday ham, this quiche takes just minutes to prep. I use a frozen pie shell to save time and make a quick pie filling with a little onion, some eggs, half-and-half, cheddar cheese, swiss cheese, and ham. You could use bacon instead of ham if you wanted to.

Pour the filling into the pie crust, pop it in the oven and 45 minutes later your quiche is ready.

Easy Ham and Cheese Quiche

Ingredients

  • 1 tablespoon butter
  • 1/2 medium yellow onion,, chopped
  • 4 eggs,, lightly beaten
  • 1 cup half-and-half
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups diced ham
  • 1 cup shredded swiss cheese
  • 1 cup shredded cheddar cheese
  • 1 deep dish frozen pie crust

Instructions 

  • Preheat oven to 375 degrees.
  • Melt butter in a small nonstick pan and cook onion until soft. Let cool slightly.
  • In a large bowl, whisk together eggs, half-and-half, salt and pepper.
  • Stir in ham and both cheeses. (I like to leave a small handful of cheese to sprinkle on top.)
  • Stir in cooked onion.
  • Pour filling into pie crust, set on a baking sheet and place in oven for 40 to 45 minutes, or until set.
  • Serve warm or chilled.

    I used gruyere cheese, cheddar cheese, and added spinach. Really good !! This recipe lends itself to some creativity and it always comes out great.

    Do you thaw and cook the pie crust before you make the quiche or just thaw the crust and make it?

      I did not pre bake my thawed pie crust. Just filled with ingredients & baked according to the recipe. Came out great!

    Pretty darn good and really easy. Let me first say that I hate it when people make something but change 75% of the recipe then turn around and rate it and correct the author. I made changes out of sheer 4 a.m. necessity. I had only white onion. I had no heavy cream so I mixed ยผ cup sour cream and ยพ cup whole milk. I used a larger pie dish so I added an egg. All in all it turned out pretty tasty. The milk/sour cream mixture gave it the consistency of heavy cream and leant a nice flavor. I prefer yellow onions but the white was fine. I’m glad I didn’t add two eggs. I would make it again! Very simple and accurate recipe.

      I hate when people criticize those who alter a recipe out of necessity or to their own taste and go on to comment how they altered the recipe and yet deserve to rate the recipe. When a recipe is altered and it’s alterations are shared, that is valuable information to many who may lack confidence in altering the recipe or those who lack ingredients called for. Don’t be so judgemental.

    Delicious!! I do add chicken bouillon (better than bouillon chicken base) to the recipe and garlic powder to bring it a little more to the top ๐Ÿ˜‰. It comes out super good, especially with a home made crust!
