These are restaurant quality burgers that are easy to make at home. The robust, salty flavor of blue cheese adds so much flavor to these burgers. There’s a pocket of blue cheese inside the burgers so it flavors the meat as it grills.

What Type of Ground Beef to Use?

My favorite ground beef for burgers is ground chuck (80/20). It has enough fat to create a super flavorful and juicy burger. An 85% lean meat works well too, but any leaner and you risk having dry burgers.

What is Blackening Seasoning?

For seasoning, the burgers are coated in blackening seasoning. It is a seasoning blend that typically has a bit of heat and a whole lot of flavor. Popular in New Orleans, it is a great seasoning for fish, pork, chicken or steak. It typically contains paprika, cayenne pepper, thyme, oregano, and garlic powder. You can make your own blackening seasoning mix or use a store-bought one like Paul Prudhomme’s Blackened Steak Magic.

What to Serve with Black and Blue Burgers?

Recipe Tips:

You can grill these burgers over charcoal, on a gas grill, or in a grill pan.

You want to assemble the burgers at least 30 minutes ahead of time and refrigerate them. This helps hold them together while they cook. Can be done up to 8 hours ahead of time.

Do not press down on the burgers while they grill.

For an easy burger sauce, I like to mix together ketchup and mayonnaise.

Ingredients

  • 2 pounds ground chuck
  • 4 ounces crumbled blue cheese
  • 8 slices bacon,, cooked
  • 1 1/2 to 2 tablespoons blackening spice
  • 4 brioche hamburger buns
  • 4 lettuce leaves
  • 1 tomato,, sliced
  • 1 ripe avocado,, sliced
  • 2 tablespoons ketchup
  • 2 tablespoons mayonnaise

Instructions 

  • Divide the ground beef into 8 equal portions. Flatten each portion into a thin burger. Top half of them with blue cheese, dividing it equally and piling it in the middle.
  • Place the other four patties on top. Press the two patties together around the edges to seal them well and completely enclose the blue cheese.
  • Place burgers on a plate, cover with plastic wrap and refrigerate for at least 30 minutes and up to 8 hours.
  • Cook bacon until crispy in a grill pan. Set cooked bacon aside. Drain off the bacon grease, leaving a little in the pan.
  • Sprinkle both sides of burgers with blackening spice.
    Reheat the grill pan over medium-high heat. Add burgers and cook for 4 to 5 minutes per side.
  • Briefly heat the buns in the grill pan.
  • To assemble, place lettuce and tomato slices on bottom of buns. Top with a burger.
  • Mix together ketchup and mayonnaise and spread on top of burgers.
    Top with bacon, avocado slices and bun tops.

Notes

Note: You can cook burgers on a gas or charcoal grill instead of using a grill pan.
