Ritz Cracker Crust

I use crushed Ritz crackers all the time as a crispy topping for casseroles like this Southern Broccoli Casserole. They make a great crust too. A crust made with Ritz Crackers turns out wonderfully buttery and crispy.

Type Of Sweet Onion To Use

You can use any type of sweet onion for this Vidalia Onion Pie. Vidalia onions are probably the most famous sweet onions. Vidalia onions are grown in Vidalia, Georgia and have a short growing season (late April to September). They are unusually sweet and mild due to the low amount of sulpher in the soil even when eaten raw and cooking them increases their sweetness. Since they are already sweet you do not need to cook them to the point of caramelization. You just want to soften them up some for this recipe.

There’s a little bit of a custard in this pie, but the onions are the real star.

Is This Pie Spicy?

A half teaspoon of TABASCO Sauce gives this onion pie just a touch of heat. To Make it spicier, add a pinch of cayenne pepper to the filling.

Variation

A few readers have suggested using bacon flavored Ritz crackers and I think that sounds delicious. Let me know if you try that!

How To Store

Leftovers will keep in an airtight container in the refrigerator for 3 days. Reheat in the oven. Microwave will make the crust soggy.

Ingredients

  • 2 tablespoons butter
  • 2 cups roughly chopped Vidalia onions,, or other sweet onions
  • 1 1/4 cups Ritz cracker crumbs
  • 5 tablespoons butter,, melted
  • 2 large eggs,, lightly beaten
  • 3/4 cup milk
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Tabasco sauce
  • ¾ cup shredded cheddar cheese
  • 1/4 teaspoon paprika

Instructions 

  • Add the 2 tablespoons of butter to a large pan and cook vidalia onion over medium heat until starting to soften. You want the onion to still have a little bite so don’t cook them too long. Remove from heat.
  • Preheat oven to 350 degrees.
  • Mix cracker crumbs with the 5 tablespoon melted butter and press into the bottom and up the sides of a lightly greased 9-inch pie plate.
  • Spoon vidalia onions on top of crust.
  • In a medium bowl, whisk together eggs, milk, salt, pepper, and Tabasco sauce. Pour mixture over onions.
  • Sprinkle cheese and paprika on top.
  • Bake for 30 minutes.

Notes

For best flavor, I recommend shredding your own cheddar cheese from a block of cheese rather than buying pre-shredded.
Use a food processor to make the cracker crumbs or place the crackers in a large ziptop bag and crush them with a rolling pin or heavy object.
