Strawberry Icebox Dessert is the ultimate no-bake Spring dessert. Fabulously creamy, it is a no-fail dessert and perfect for using plump, juicy, in-season strawberries.

Graham crackers, a cream cheese/whipped cream mixture and sliced strawberries are layered in a baking dish. This recipe is so, so easy. It’s a great recipe for kids to help with.

Once the graham crackers get soft, this dessert has the texture of a light and tender cake. So delicious!

Summer Dessert

Icebox cakes are ideal for summer entertaining. Their cool, creamy texture is perfect on a hot summer day. So refreshing. I also love that I don’t have to turn the oven on to make one.

Make-Ahead Dessert

This icebox dessert is one of my favorite make-ahead desserts for potlucks and get-togethers. It should be made at least 2 hours in advance. 8 hours in advance is even better. The graham crackers get soft over time giving it a wonderous texture.

Minimal Ingredients

No crazy ingredients needed to make this recipe. Just basic ingredients that you are likely to have on hand.

  • Cream Cheese– let it soften so that it mixes in well.
  • Powdered Sugar
  • Heavy Whipping Cream
  • Vanilla Extract
  • Almond Extract– go easy on the almond extract. A little goes a long way.
  • Cinnamon Graham Crackers– you can use regular or chocolate but I like the flavor that cinnamon adds.
  • Fresh Strawberries– the real star of this dessert.

Recipe Tip

You will need a hand-held electric mixer for this recipe. Be sure to beat the whipping cream mixture until it is thick, but do not overbeat it.

Storage

If wrapped well, will keep for 2 to 3 days in the refrigerator.

Scatter remaining 1 cup of strawberries on top.
  • Cover with plastic wrap and refrigerate at least 2 hours and up to 8 hours before serving.

This strawberry icebox dessert sounds absolutely divine! I love how simple it is to put together, especially with fresh strawberries being so abundant right now. It reminds me of a similar no-bake dessert my grandma used to make, though hers had a different crust. I’m always looking for easy dessert recipes that don’t require a lot of fuss, and this one fits the bill perfectly. I’m curious if using frozen strawberries would work as well, or if it would make the filling too watery? Anyway, I’ll definitely be trying this out soon, maybe even using Omni AI Video to create a fun little video of the process for social media! Thanks for sharing this delightful recipe.

This is exactly the kind of no-bake dessert that works well for spring or summer gatherings: simple layers, fresh strawberries, and enough chill time for the graham crackers to soften into a cake-like texture. I also like that kids can help assemble it without much fuss. https://ai-img-editor.com/

This strawberry icebox dessert looks absolutely dreamy! The combination of fresh strawberries with creamy filling over graham crackers is pure spring perfection. Before making it for a party, I used GPT Image 2 to visualize the final plating and the result was stunning.

We needed something portable, something crowd-pleasing…and I totally spaced until the last minute. It all went south quickly with a cake that basically crumbled in the car and the dessert that I was rushing to make. I had a recipe in mind and it turned out to look like a Slither io snake’s leftover meal. Never again, plan ahead is the mantra now.
