How To Make Crock Pot Corn on the Cob
I cut the corn on the cob either in half or into thirds, add it to the crock pot with a can of coconut milk, 1 cup water, half a stick of butter, seasoned salt, pepper, and red pepper flakes.
The sugars in the coconut milk enhance the sweetness of the corn and really bring out its flavor.
And butter always makes anything taste better.
The corn needs about two hours on HIGH in the slow cooker.
You will need a 6-quart or larger slow cooker for this recipe.
Cooking corn on the cob in the slow cooker is an easy, hands-free way to make corn for a picnic or cookout. You’re free to do other things while the corn cooks for a few hours in the crock pot, soaking up all those awesome flavors. Then you can just turn it to warm if you’re not ready to serve it right away.
Fresh or Frozen Corn?
I’ve tried this recipe with both fresh and frozen corn on the cob and I like fresh much better. But you can definitely use frozen corn if that is what you have.
Storage
Leftovers will keep for 4 to 5 days in an airtight container or ziplock bag in the refrigerator. You can cut the kernels off the cob and add to soups or salads.

Ingredients
- 5 to 6 ears of corn,, cut in half or thirds
- 1 (13-ounce) can coconut milk
- 1 cup water
- 4 tablespoons butter,, cut into 4 or 5 pieces
- 1 teaspoon seasoned salt
- 1/2 teaspoon pepper
- 1/2 teaspoon red pepper flakes
- chopped cilantro,, optional
Instructions
- Place corn pieces in 6-quart crock pot and add remaining ingredients, except cilantro.
- Cover and cook on HIGH for 2 hours.
- Remove corn from crock pot and sprinkle with cilantro.

My grandfather taught all of his eight kids and their kids the following way to cook corn: under optimum conditions, i.e., you grow your own corn, it is 30 minutes from garden to mouth! When Grampa went to pick and shuck the corn, Gramma got out the cooking pot and filled it with water and a bit of salt. She put it on the stove on high. By the time the water was boiling, Grampa had the corn ready for a quick wash and into the boiling water went the ears. When the water returned to a full rolling boil, the stove was turn off. The pot was covered and moved off the hot burner. Timer was set for 15 minutes. When it sounded, the corn was taken from the pot and placed on a serving plate. We each buttered our own cob of corn. Don’t let the cooking time fool you. The corn tastes fresh, sweet and succulent! It is never tough and over cooked.
Howdy. This sounds so easy and I want to try it. For someone who hates coconut, should I stay away from it?? Does that milk just give a sweet flavor or will I run for the hills cause of the coconut? I’m assuming there are not flakes of coconut in that can?? I’ve never tried it. If I choose not to use that, should I just up the water?

In my opinion, coconut milk does not have that much coconut flavor, but some people think it does. There are no flakes in the can. You could use regular whole milk instead.
Can you cook the corn on low for several hours instead of on high for 2.
I really enjoy yellow corn and it has a low glycemic index.
