Crock Pot Cauliflower and Cheese

An easy and cheesy Cauliflower and Cheese recipe made in the crock pot. You won’t believe how cheesy this cauliflower is and it only requires about 5 minutes of hands on time.

Crock Pot Cauliflower and Cheese is full of cheesy goodness and your crock pot does practically all the work for you. Just 3 to 3 1/2 hours in the crock pot with a can of condensed cheddar soup, some evaporated milk, a little onion, salt, pepper, and paprika, plus a bunch of cheddar cheese is all it takes.

Crock Pot Cauliflower and Cheese

I don’t know about you, but I have the hardest time coming up with different side dish ideas. We tend to eat the same ones over and over. Green beans, peas, and corn get more than their fair share at our dinner table.

Cauliflower is something I hardly ever think to cook. Some people love cauliflower, others hate it.

But I don’t think there’s any denying that cauliflower and cheese were meant for each other.

I mean, just look at how perfect those cauliflower florets look bathed in cheese sauce.

Cauliflower is a great vegetable choice in the fall when it is in season, but to be honest, the quality of the cauliflower at my local market seems to be pretty consistent year round. That makes cauliflower a great choice anytime of year!

Crock Pot Cauliflower and Cheese

Tender and cheesy cauliflower is a cinch to make in a crock pot.
PREP: 5 minutes
COOK: 3 hours
TOTAL: 3 hours 5 minutes
SERVINGS: 6

Ingredients

  • 1 head cauliflower, cut into florets
  • 1 can condensed cheddar soup
  • 1 (5-ounce) can evaporated milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/4 cup finely diced onion
  • 2 cups shredded cheddar

Instructions

  • Grease the inside of a 6-quart crock pot.
  • Place cauliflower florets in crock pot.
  • In a medium saucepan, combine remaining ingredients. Heat over medium heat, stirring constantly, until cheese is melted.
  • Pour sauce over cauliflower.
  • Cover crock pot and cook on low for 3 to 3 1/2 hours, depending on how tender you want the cauliflower.

Notes

Note: Do not use extra-sharp cheddar cheese. It is too acidic and can turn grainy.
It's also best NOT to use pre-shredded cheese.

  2. canned cheese soup freaked me out, but my daughter had made alfredo sauce from organic ingredients and put it in the fridge so I decided to pour that over my cauliflower since it contained butter, cream and cheese.

    Just curious about how much cauliflower ? My husband bought a medium size one, but after making into florets it looks a like a lot for a 4 quart crock pot.

  4. My mother used to make this and then made Macaroni and Cheese with the extra cheese sauce then baked it for a little bit to get the crust on top of the mac ‘n’ cheese. We always liked it, had a few random pieces of cauliflower in it too.

  6. Just made this yesterday. Looked nothing like the pictures, looked absolutely disgusting. The milk curdled. BUT tasted amazing! Was a winner with my picky 15 month old nephew. Will have to try again, maybe add the shredded cheese at the end and stir to melt while still in slow cooker.

    1. Try using Velveta cheese. I’ve tried the shredded cheese for broccoli. It didn’t melt right and looked curdled.

      1. i wonder if the pre shredded cheese we buy is the problem, it has anti caking ingredients like cellulose that could be the problem

  8. I used sharp cheddar, because I had a hard time finding regular. I know you said to not use extra sharp, but would sharp work okay?

  9. While this certainly looks delicious, I’m a little confused as to how it is low-carb? I plugged in all the ingredients on MyFitnessPal and separated out per serving, and it’s showing 75.3g Carbs with 13.9g Fiber, leaving you at over 50g carbs for one serving. For those of us on a strict low-carb diet, this is WELL over the daily allowance! Such a bummer, it looked too good to be true. aybe one day I’ll try my hand at low-carb-ing the recipe, but until then I’ll have to archive it 🙁

      Apologies, I meant to add this to the Buzzfeed article that listed your recipe as a low-carb option. It’s clear on your page you haven’t claimed it to be low carb. Not sure why Buzzfeed did that!

    2. Every body is entitled to a cheat day, just have a few less carbs the next day, I do this and it didn’t effect your weight loss ?

      1. uh NO the idea of an allowed CHEAT DAY is your opinion only…too many go off track with too much of this… a huge carb hit may negate 2 weeks of getting into Keto.

        1. My nutritionist told me it takes 4 days of healthy eating to negate a cheat day. If you are trying to lose that means 5 days of no change.

            I did slow carb, basically atkins but i can have beans, and i HAD to do a cheat day because it resets your metabolism. I lost 100lbs doing this. So maybe bad for some and maybe good for some, ya never know
