Four Amazing Layers 

Butterscotch Lush has a delicious and buttery crust made from Pecan Sandies crumbs, a cream cheese layer, a creamy butterscotch pudding layer, and a layer of whipped topping on top. It’s an almost no-bake dessert that is perfect for summer potlucks and picnics.

How To Make

  1. Make the Crust. Process the cookies in a food processor until finely ground. Note: If you don’t have a food processor, place them in a large ziptop bag and crush them with something heavy. Then mix together crushed cookies, melted butter, and flour. Press in the bottom of a 9×13-inch pan and bake for 8 to 10 minutes. Let cool.
  2. Make the Cream Cheese Layer. Beat cream cheese and confectioners’ sugar. Then mix in 2 cups of Cool Whip.
  3. Make Butterscotch Pudding Layer. Mix pudding mix with milk and spread on top of cream cheese layer.
  4. Topping– Spread Cool Whip on top. Top with chopped pecans.

I’m a huge fan of butterscotch pudding. The butterscotch layer gives this dessert most of its flavor, but it is complemented by the pecan crust and creamy cream cheese layer, plus the light and creamy whipped topping layer.

Sprinkle a few chopped pecans on top and you have the perfect summer dessert for butterscotch lovers. ๐Ÿ™‚

Ingredients

  • 1 (11.3-ounce) package pecan sandies
  • 6 tablespoons butter, melted
  • 1/2 cup flour
  • 12 ounces cream cheese, softened
  • 1 1/2 cups confectioners’ sugar
  • 1 (16-ounce) frozen whipped topping, thawed
  • 2 (3.4-ounce) instant butterscotch pudding
  • 3 1/4 cups milk
  • chopped pecans, optional

Instructions 

  • Place cookies in food processor and process until finely crumbled.
  • Stir together cookie crumbs, melted butter, and flour in a medium bowl.
  • Transfer cookie crumb mixture into a lightly greased 9×13-inch pan. Press evenly along bottom of pan. Place in 325 degree oven for 8 to 10 minutes. Let cool.
  • Beat cream cheese until smooth and gradually beat in confectioners’ sugar. With mixer on low, beat in 2 cups whipped topping just until combined.
  • Spread cream cheese layer on top of crust.
  • Using an electric mixer, beat both boxes of butterscotch pudding with milk on LOW until thick. Spread on top of cream cheese layer.
  • Spread remaining whipped topping on top.
  • Garnish with chopped pecans if desired.
    Refrigerate at least 2 hours before serving.

      I never used the cookies in mine. I canโ€™t find my recipe, but I know it was flour, sugar butter.

      Most recipes call for 1 stick butter, 1 cup flour, 1 cup crushed pecans. Mix thoroughly and press into bottom of the 9×13 (buttered or sprayed) pan. Bake that first layer at 350 for 15-20 min. It is much better and cuts the sweetness a bit (which is needed).

    I made this but used sugar free pudding and for the bottom layer I used sugar free cheesecake pudding. It makes for a rich diabetic dessert and it was great. My husband is diabetic and he loved it.

    I can’t? find the Instant Butterscotch pudding, can I use regular ?

      Yes just let cool completely before using. I use regular because instant pudding gets watery (runny)
