This juicy grilled chicken is such a great summer recipe. I find myself wanting to make it again and again. I love to grill some corn and zucchini with it and make this Grilled Zucchini-Corn Salad to go with it.

Ingredients Needed For BBQ Mayo Marinated Grilled Chicken

  • Mayonnaise– use a good quality mayonnaise like Hellmann’s or Duke’s.
  • BBQ Sauce– use your favorite BBQ Sauce. I usually use KC Masterpiece or Sweet Baby Ray’s.
  • Creole Mustard– gives a little extra flavor and zip. Dijon mustard can be used instead.
  • Garlic Powder
  • Boneless, skinless chicken breasts and/or thighs.

Why Use Mayonnaise

Marinating chicken in mayonnaise has lots of advantages. It adds flavor, tenderizes the meat, helps keep the moisture in the chicken, and helps create a wonderfully caramelized exterior.

How Long To Marinate

You want to marinate the chicken for at least 1 hour and up to 8 hours. Aim for at least 4 hours for best flavor.

How Long To Grill Chicken

Grill time will vary based on the thickness of the chicken, size of the chicken and how hot the grill is. Plan on about 6 to 8 minutes per side and check with an instant read thermometer. Chicken is done when it reaches an internal temperature of 165 degrees.

Recipe Tips

  • If you don’t have a grill, you can use a grill pan.
  • Let chicken rest for 5 minutes after grilling.
  • If you want to use bone-in chicken, you will need to cook it for about 2 to 3 minutes per side longer.
  • Make it spicy. Either use a spicy BBQ Sauce or add half a teaspoon of cayenne pepper to the marinade.

  • Combine first 4 ingredients in a large ziptop bag.
  • Add chicken and massage the marinade into the chicken. Refrigerate for 1 to 8 hours.
  • Remove chicken from bag. Season chicken lightly with salt and pepper.
  • Preheat grill to medium-high.
  • Grill for 6 to 8 minutes per side.
