Grilled Citrus Chicken

Grilled Citrus Chicken is a wonderful summertime recipe. Marinated in orange juice and lime juice with herbs, this chicken has a fresh and zesty flavor. I love to drizzle it with a little White BBQ Sauce for extra flavor.

Easy Marinade

The marinade is a simple mixture of orange juice, lime or lemon juice, olive oil, thyme, rosemary, onion powder, red pepper flakes, and a little brown sugar.

No need to dirty a bowl to mix the marinade. Just add all the ingredients to a large ziptop bag and slush them around until they are mixed.

How Long To Marinate?

Try to leave the chicken in the marinade for at least 30 minutes and up to 8 hours. Try not to marinate for longer than 8 hours. The acidity in the citrus juices will cook the chicken over time and change its texture.

Eat As Is Or Finish With White BBQ Sauce

I like to make what’s called an Alabama White Sauce to drizzle on this chicken for more flavor, but it is totally optional. It is similar to ranch dressing, but tangier.

What Type Of Chicken To Use

I typically grill chicken breasts but this recipe works equally well with boneless, skinless chicken thighs. Chicken thighs take a little longer to cook than chicken breasts do.

I like to cut really large chicken breasts horizontally into 2 thinner pieces. If not cutting the chicken breasts, pound them out a little so they are even thickness.

How To Tell When Chicken Is Done

When chicken is fully cooked, it will feel firm when you press on it. To be sure, use an instant read thermometer. Chicken is done when it reaches an internal temperature of 145 degrees F.

Strorage

Leftovers will keep for 4 days in an airtight container in the refrigerator and are a great addition to a salad.

Ingredients

  • 1 naval orange, juiced
  • 1/2 lemon or lime, juiced
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons brown sugar
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon black pepper
  • 4 boneless, skinless chicken breasts

White BBQ Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 3/4 teaspoon Worcestershire sauce
  • 1/2 teaspoon horseradish
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper

Instructions

  • Whisk tother all White BBQ Sauce ingredients in a small bowl. Refrigerate until needed.
  • Combine first 10 ingredients in a large zip top bag. Add chicken and turn to coat.
    Refrigerate for 2 to 8 hours.
  • Preheat a grill to medium-high.
    Grill chicken for 5 to 6 minutes per side.
  • Drizzle White BBQ Sauce on chicken and serve.
