Not only are these Sugar Cookie Bars perfect for bake sales, but they’re great for holidays too. And they can be easily customized. The frosting can be tinted pink for Easter or orange for Halloween. Or use some Christmas sprinkles or Valentine’s Day sprinkles.

This is a really simple recipe made with ingredients you likely already have on hand. A little almond extract gives these Sugar Cookie Bars an amazing flavor, but if you don’t like almond extract, just use a little extra vanilla extract.

What makes these Sugar Cookie Bars so easy to make?

Instead of scooping the sugar cookie dough into individual cookies, the dough is pressed into the bottom of a 9×13-inch pan. It only needs to bake for 15 minutes.

Once the cookie bars are cool, spread the buttercream frosting on top and you’re ready to slice them and eat them. It’s one of the easiest and most delicious bar recipes ever!

Ingredients

  • 1/2 cup butter,, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Frosting

  • 1/2 cup butter,, softened
  • 2 1/3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract
  • 2 tablespoons milk or half-and-half
  • 1/4 cup sprinkles

Instructions 

  • Preheat oven to 375 degrees. Line a 9x13-inch pan with foil and lightly grease it. Set aside.
  • Using an electric mixer, beat butter and sugar until light and fluffy, about 2 minutes.
  • Add egg, sour cream and both extracts. At this point the mixture may look curdled. That is ok.
  • Combine flour, baking powder, and salt. With mixer on low, add flour mixture and mix just until incorporated.
  • Transfer dough to prepared pan and press evenly into pan.
  • Bake for 15 minutes. It will look a little undercooked, but it will continue to cook some after you remove it from the oven. Let cool.
  • Make frosting. Beat butter and powdered sugar until mixed well. Add extracts and milk and beat until smooth and creamy. 
  • Spread frosting on cooled bars. Sprinkle with sprinkles.

I use salted butter unless otherwise noted
