Ingredients

  • 6 boneless, skinless chicken thighs
  • salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil or vegetable oil

  • 2 ripe fresh peaches, peeled and sliced
  • ½ cup peach preserves
  • ¼ cup white wine or chicken broth
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard

Instructions 

  • Pat chicken thighs dry and season with salt, pepper, garlic powder and paprika.
  • Heat oil over medium-high in a large skillet.
  • Add chicken thighs and cook for 5 to 6 minutes on each side. Remove from pan.
  • While chicken cooks, mix together preserves, Worcestershire sauce, apple cider vinegar, and Dijon. Set aside.
  • If needed, drizzle a little more oil in the pan.
    Add jalapenos and cook for 2 minutes.
    Add peaches and cook 1 to 2 minutes.
  • Deglaze the pan with the white wine or chicken broth.
  • Add the preach preserves mixture and return the chicken to the skillet. Cook for about 2 minutes, turning to coat the chicken in glaze.

Notes

Use 1/2 to 1 teaspoon of salt to season the chicken thighs and about 1/2 teaspoon of pepper.
