Sautéed cabbage and onion tossed with buttered noodles and bacon is one of my favorite meals and it couldn’t be easier to make. Cabbage and Noodles is an inexpensive comfort meal that we always look forward to during the cooler months.

Tis the season for comfort foods, or at least it should be. Our summer got off to a slow start this year and now it is lingering. But the cool weather is bound to get here sooner or later and I’m prepared with a stack of cool weather recipes.

I absolutely love sautéed cabbage. Especially if it is sautéed in bacon fat with onions and tossed with buttery noodles. How can anyone resist that?

Crispy salty bacon is always a good thing.

Sautéed fried cabbage becomes tender and sweet. It cooks down quite a bit and literally blends in with the noodles. I added just a few caraway seeds that I crush with the back of a spoon. Caraway seeds have a strong flavor and a little goes a long way. If you don’t like the taste of them, just leave them out.

And be sure to try Sweet and Sour Cabbage. It’s another one of my favorites.

Make It Spicy

If you want this recipe to be spicy, add a half teaspoon of crushed red pepper flakes.

Recipe Tips

  • Add some minced garlic for more flavor.
  • Sliced smoked sausage can be used instead of bacon.
  • Leave the caraway seeds out if you don’t like them.
  • Don’t skimp on the salt and pepper. This is a simple dish with only a few ingredients and they add alot of the flavor.

How To Serve

This recipe can be eaten as a main dish or it makes a great side for pork chops. Some Buttermilk Cornbread Muffins are a must!

Storage

Leftovers can be kept in an airtight container for 4 days and can be reheated in a microwave.

Ingredients

  • 12 ounces (7-8 slices) thick bacon, cut into1/2-inch pieces
  • 1 small onion, diced
  • 1 head green cabbage, sliced
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed caraway seeds
  • 12 ounces egg noodles
  • 2 tablespoons butter

Instructions 

  • Cook bacon in a large nonstick skillet until crispy. Remove with a slotted spoon and place on paper towel-lined plate.
  • Add onion to bacon grease and cook until it begins to soften, about 2 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add noodles and cook according to package directions. When they are done, drain and place in a large bowl with butter.
  • Add cabbage to skillet with bacon grease and cook until tender, about 10 minutes, using tongs to move cabbage around so that it cooks evenly. Add caraway seeds, salt, and pepper.
  • Stir cabbage and bacon into noodles and serve.

Notes

The caraway seeds can be left out if you don’t like them.
If you want this dish to be spicy, add half a teaspoon of crushed red pepper flakes.

    I know this was a long time ago, but I had to say thanks! This is a wonderful idea!

    There’s a Hungarian version of this with sweetened onion and cabbage over egg noodles. If you don’t like to add sugar, I often make it with onion, cabbage and sliced apple, then save a cup of it before adding noodles. The rest of the cabbage mixture I chill and have it for breakfast. It’s an amazing breakfast, though unconventional.

    Another Hungarian cabbage and noodle recipe is with cabbage, onion and potato, use russet for this one, you want the potato to form a sort of creamy mess. It absorbs a lot of oil, so it’s not at all diet food. But so delicious! It competes with mac and cheese in my mind for first place in comfort food. Of course bacon goes good in this one.. I can hardly think of anyplace bacon doesn’t go well!

      My Hungarian side always made the one with russet potatoes! I always loved it as does my family. I fry up a pound of bacon until crisp. Pour off grease into a bowl after each batch of crisp bacon-save. Once all bacon fried, add a few tablespoons of bacon grease to pan. Fry the onions until translucent then add in the garlic. Using a slotted spoon, remove onions and garlic drain on paper towels. Then pour rest of bacon grease into a wide and deep sauté pan. Heat up then add sliced cabbage. Mix cabbage with bacon grease then cover and cook til tender-stir often. Boil I package of Kluski noodles according to package directions. I cube four potatoes-love potatoes and cook with noodles. I don’t peel the potatoes but scrubbed really well. Once noodles and potatoes tender-drain. Put in a big pot, add bacon, onions and garlic. Mix well then pour the WHOLE pan of cabbage over the noodles and mix again. Enjoy!

    When times were hard raising my girls I would make this minus the meat because we didn’t have any. My girls loved this and never asked about the meat. I’d serve this along with apple crisp for dessert they never even knew we were struggling. Thanks for sharing the recipe I’ll be making it soon for myself.

    In Hungary, where I come from, we tear the cabbage, salt a little and let stand. If the cabbage releases liquid, we pour it away. Browns cabbage in oil or shortening, until it gets color and become soft. Cook the noodles, mix together and sprinkle on pretty much finely ground black pepper. There should be so much browned cabbage so you can not see the noodles. Some people just have a little pepper and then some sugar, a nice flavor accent.
