One of my favorite Chicken and Biscuit Casseroles and such an easy way to make Chicken Pot Pie.

What Is A Bubble Up?

This casserole is called a bubble-up because it has pieces of biscuit dough mixed in that rise or bubble-up as the casserole bakes. Other Bubble-Up Casseroles I love are Meat Lovers Bubble Up Pizza, Breakfast Biscuit Bubble Up, and Chicken Bacon Ranch Bubble-Up.

Ingredients

  • Condensed Cream of Potato Soup
  • Condensed Cream of Chicken or Cream of Mushroom Soup
  • Sour Cream– adds tons of creaminess.
  • Garlic Powder and Thyme
  • Mixed Vegetables– I use frozen peas, carrots and green beans.
  • Cooked Chicken– I use rotisserie chicken, but you can use any cooked chicken.
  • Cheddar Cheese– I use sharp cheddar and shred it myself.
  • Pillsbury Grands Homestyle Biscuits– I find the Homestyle work better than the flaky layers.

How To Make Chicken Pot Pie Bubble Up

  1. Mix together the filling ingredients.
  2. Add the biscuits. Cut each one in fourths and stir into mixture until evenly dispersed.
  3. Bake. You need to bake this casserole for a fairly long time to make sure the biscuit pieces aren’t doughy. I bake it covered for 20 minutes and then uncovered for 20 minutes.

Make Ahead

If you want to prep in advance, mix all filling ingredients together but don’t mix in the biscuit pieces until just before baking.

Ingredients

  • 1 (10-ounce) can condensed cream of potato soup
  • 1 (10-ounce) can condensed cream of chicken or cream of mushroom soup
  • 1 cup sour cream
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried thyme
  • ¼ to ½ teaspoon black pepper
  • cups frozen mixed vegetables, cooked according to package directions
  • cups chopped cooked chicken
  • cups shredded cheddar cheese
  • 1 (16.3-ounce) can Pillsbury Grands Homestyle Biscuits

Instructions 

  • Preheat oven to 350 degrees F and spray a 9×13-inch baking dish with cooking spray.
  • In a large bowl mix together cream of potato soup, cream of chicken soup, sour cream, garlic powder, thyme, and black pepper.
  • Stir in mixed veggies, chicken, and cheese.
  • Open can of biscuits and separate into 8 biscuits. Cut each one into 4 pieces.
    Add to bowl with soup mixture and mix in.
  • Transfer mixture to prepared baking dish.
    Cover with foil and bake for 20 minutes.
    Uncover and bake another 20 minutes.
