How To Make Cajun Buttered Corn

  1. Cook the corn. Boil the corn in boiling water for 6 to 8 minutes.
  2. Make butter sauce. Melt the butter in a saucepan. Add Cajun seasoning, garlic powder, black pepper, and paprika. Heat 1 to 2 minutes.
  3. Combine. Pour butter sauce over corn and serve.

How To Pick Fresh Corn

Look to purchase corn that has not been husked. The husks help keep it from drying out. The corn should feel heavy for its size. Take a peek at the kernels at the tip. They should look plump and tightly packed.

You can use yellow corn, white corn, or bicolor corn.

Adjust The Heat Level

Different Cajun seasonings have varying levels of heat. If it is not spicy enough for you, add a little cayenne pepper. For Cajun seasoning I like Zatarain’s and Tony Chachere’s (actually a creole seasoning but can be used interchangeably with cajun). Or you can use homemade Cajun seasoning.

Make It Cheesy

For a little more flavor you can sprinkle the corn with grated Parmesan cheese.

Recipe Tips

  • Use fresh summer corn with the husks on for best flavor. Don’t remove the husks until just before cooking. Cook as soon as you can after purchasing or picking.
  • Don’t overcook. Super fresh corn does not need long at all to cook. 6 to 8 minutes is plenty. You can even do less if it is very fresh. Overcooked corn can get waterlogged and soggy.

Instructions

Notes

Some Cajun seasonings are really salted. You may want to start with less than a tablespoon. You can add some cayenne pepper if you want more heat.
