I have a serious sweet tooth so I love sweet versions of foods that are typically savory, like these easy dessert quesadillas. They are drool worthy. Just look at that vanilla ice cream dripping down the edges of the crispy cinnamon-sugar coated quesadilla.

What Type Of Apples To Use?

A fresh apple filling sweetened with brown sugar and cinnamon is the filling for these quesadillas. I like to use Granny Smith apples. I love their tartness combined with the brown sugar and cinnamon. Honey Crisp are also delicious in this recipe.

If you want to make a super easy apple quesadilla, use a can of apple pie filling instead of making fresh apple filling.

Which Tortillas To Use?

I like to use medium flour tortillas and find them to be just the right size. You can use small tortillas or large if you prefer.

If not serving right away, place the quesadillas in a 250 degree oven to keep them warm.

A pizza cutter is a really handy tool for quickly and easily cutting the quesadillas into triangles.

Ingredients

  • 1 tablespoon butter
  • 2 Granny Smith apples,, peeled and finely diced
  • 2 tablespoons packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • pinch of nutmeg
  • 8 flour tortillas
  • 1/2 cup caramel sauce
  • 4 to 6 tablespoons butter

Cinnamon Sugar

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Toppings

  • Caramel sauce
  • vanilla ice cream

Instructions 

  • Melt 1 tablespoon of butter in a skillet over medium heat.
    Add diced apple and cook until it begins to soften.
  • Add brown sugar, cinnamon, and nutmeg and cook for 3 to 5 minutes. Remove from heat.
  • Spread 1 tablespoon of caramel sauce on one side of each tortilla.
  • Divide the apple mixture evenly between 4 of the tortillas, spreading it out evenly.
  • Place the remaining 4 tortillas, caramel-side down, on top of the apples.
  • Wipe the skillet clean and melt 1 tablespoon of butter in the skillet over medium heat. Add 1 quesadilla and cook until browned on each side. Add a little more butter for the second side if necessary.
  • Repeat with remaining quesadillas.
    In a small bowl, mix together the cinnamon sugar.
    While still warm, sprinkle with cinnamon sugar.
  • Serve drizzled with caramel sauce and top with a scoop of ice cream.

Notes

I use store-bought caramel ice cream topping.
If not going to eat right away, keep the quesadillas warm in a 250 degree oven.
