How To Make Cheesy Buffalo Chicken Taquitos
- Mix the filling ingredients together. The filling is a simple mixture of cream cheese, Buffalo wing sauce, Ranch dressing, shredded cooked chicken, shredded cheddar cheese, blue cheese crumbles, and sliced green onion. So much flavor here.
- Roll up the taquitos and place them seam side down on a baking sheet.
- Bake for 15 minutes or until golden and crispy.
Rotisserie Chicken
You will need about 2 cups of shredded, cooked chicken for this recipe. It’s easiest to use rotisserie chicken, but you can use leftover baked, poached, or grilled chicken instead.
Tortillas
You can use either flour or corn tortillas. I prefer flour. You want the small (fajita-size) tortillas. Whichever you are using, place the tortillas in a stack on a microwave-safe plate with a damp paper towel on top of the tortillas and microwave for 30 to 40 seconds. This will make them more pliable so they are less likely to tear when you roll them up.
Make Ahead and Storage
The filling can be mixed together up to 24 hours in advance. Refrigerate and then let sit at room temperature for 20 to 30 minutes before rolling the taquitos so the mixture will be easy to spread. The taquitos can be rolled up to 8 hours in advance. Cover tightly with plastic wrap so the tortillas do not dry out and refrigerate.

Cheesy Buffalo Chicken Taquitos
Ingredients
- 4 ounces cream cheese,, softened
- 1/3 cup Buffalo Wing Sauce
- 2 tablespoons Ranch dressing
- 2 cups shredded cooked chicken
- 1 1/2 cups shredded cheddar cheese or colby jack cheese
- 1/3 cup blue cheese crumbles
- 2 green onions,, sliced
- black pepper
- 12 small flour or corn tortillas
- Ranch dressing for serving
Instructions
- Preheat oven to 425 degrees and spray a large rimmed baking sheet with cooking spray.
- Place cream cheese, wing sauce and ranch dressing in a large bowl and use an electric mixer to beat until smooth.
- Stir in the chicken, cheese, blue cheese crumbles and half the green onion. Season to taste with black pepper.
- Place the tortillas on a microwave-safe plate. Cover with a damp paper towel and microwave for 40 seconds to make more pliable.
- Divide chicken mixture between the tortillas, placing it on the lower third of the tortillas. Roll up tightly and place seam side down on prepared baking sheet.
- Spray taquitos with cooking spray and bake for 15 minutes or until golden brown.
- Transfer to a serving plate and sprinkle with green onion. Drizzle with Ranch dressing or serve with a bowl of ranch dressing for dipping.
