How Ripe Should The Bananas Be?
You want the bananas to be very ripe. They add both sweetness and moisture to the bread and very ripe bananas have more of both. The bananas should have a lot of black spots on them.
Use the Toothpick Test
Often, banana bread looks done but is still gooey in the middle. To tell if it is done, insert a toothpick in the center. If it comes our clean or with only a few crumbs attached, it is done. If it comes out wet, the bread needs to cook longer.
Storage
It’s moist enough to keep for 3 days or so wrapped well. I think it tastes better though if you cut a slice and warm it in the microwave for a few seconds. Banana Bread also freezes well. Wrap it well in plastic wrap and then place in a freezer bag and freeze for up to 3 months.

Butterscotch Banana Bread
Ingredients
- 3 medium very ripe bananas, mashed
- 1 large egg
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 3/4 cup packed brown sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup butterscotch chips
Instructions
- Preheat oven to 350 degrees and spray a 9X5-inch loaf pan with baking spray with flour.
- Place bananas, egg, oil, brown sugar, and vanilla in a large bowl. Use an electric mixer and mix until blended.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add flour mixture to banana mixture and stir just until combined.
- Stir in butterscotch chips. Transfer batter to prepared pan. Bake for 45 to 50 minutes.

I just made this. I have made banana bread in the past but never added butterscotch. I had extra butterscotch morsels left over and 3 bananas that were overly ripe and was looking to see if there was a recipe such as this. It turned out perfect. Moist, delicious. No. Prep it first then when you have your batter in it, put it in the oven ๐
I used this recipe to make large muffins. Didnโt change anything in the recipe, just put it into the large muffin tins instead of a loaf pan. It made six large muffins. I sprinkled turbinado sugar and a bit of cinnamon on top, then baked them at 500ยฐ for five minutes. I then (without opening the oven) turned the temp down to 350ยฐ and baked them another 30 minutes. They rose beautifully and taste delicious!
