Making this simple candy is as easy a melting a bag of white chocolate chips in the microwave and stirring in macadamia nuts, coconut, and rice cereal (I use Rice Krispies),
For extra flavor toast the macadamia nuts and the shredded coconut. This will really bring out their flavors.
You can easily toast them in a nonstick pan set over medium-low heat. Stir them frequently until fragrant and starting to turn golden.

Ingredients
- 1 (12-ounce) bag white chocolate chips
- 2 teaspoons shortening
- 1 cup sweetened shredded coconut,, toasted
- 2/3 cup chopped macadamia nuts,, toasted
- 1/2 cup rice cereal
Instructions
- Place white chocolate chips and shortening in a microwave-safe medium bowl. Microwave at 30 second intervals, stirring in between, until melted.
- Stir in coconut, macadamia nuts, and rice cereal.
- Drop by spoonfuls onto parchment paper-lined baking sheet. Let stand until set and store in an air-tight container at room temperature.
