Tomato Cracker Salad is a simple southern dish that is a must for summer. Ripe summer tomatoes are combined with mayonnaise and crushed saltine crackers. This is a recipe that’s been made throughout the south for many years.
Tomato Cracker Salad may sound and look a little bit strange, but if you are a fan of tomato sandwiches, you will love it. It is best eaten right away, before the crackers become soggy. It is a recipe that will most likely have to grow on you, but give it a chance and it is bound to become a summer favorite.
This is such a simple recipe using just a handful of ingredients. In addition to the tomatoes, mayonnaise, and crackers, I add a little sliced green onion, salt, pepper, and a pinch of garlic powder.
Using the ripest, freshest tomatoes and a good quality mayonnaise is key to a great Tomato Cracker Salad. I use either Duke’s Mayonnaise or Hellman’s.
You don’t have to but I think it’s best to discard as many of the seeds from the tomatoes as possible. They just don’t add any flavor and will water down this summer salad.
You can get all of the ingredients prepped and ready ahead of time and then it takes just a minute or two to mix them together.
Tomato Cracker Salad is an old-fashioned recipe that is perfect for a summer luncheon.
