Raspberry Mojitos are sweet and refreshing with lots of raspberry and mint flavor. An easy to make cocktail that’s perfect for summer entertaining!
For extra raspberry flavor I used a combination of muddles raspberries plus some raspberry-flavored rum. Raspberry vodka would also work well.
Fresh raspberries get muddled in a glass with fresh mint leaves, fresh lime juice, and some simple syrup.
Note: Raspberries do have lots of little seeds and if it bothers you to have them in your drink, you can press the raspberries through a fine-meshed sieve and only use the juice in your drink.
Finish the Raspberry Mojitos off with a little club soda.
Give these raspberry Mojitos a try and you’ll see that a raspberry version of a mojito makes a winning cocktail for a hot summer day. It’s hard to beat the refreshing combination of mint and rum mixed with raspberries.
