Mojitos have soared on popularity in recent years and you can find numerous variations of them beyond the traditional Mint Mojito. I’ve made various mojitos including strawberry, peach, and watermelon. Nectarine Mojitos are among my favorite. Ok maybe I say that about every Mojito I try.
Nectarines are very similar to peaches but as much as I love peaches, I’ll choose a nectarine over a peach any day. To me, they have a much sweeter flavor than peaches. When chosing nectarines, look for ones with lots of speckles on the skin. They tend to be sweeter. Use either white nectarines, which tend to be the sweetest, or yellow, which are more tangy and taste most like peaches.
Nectarine Mojitos
Ingredients
- 1 1/3 cups peeled,, diced Nectarines
- ¾ lime,, halved and cut into thin slices
- 8-12 mint leaves
- 2 tablespoons sugar
- ½ cup rum
- ½ cup club soda
Instructions
- Place apricots, lime, and mint in a pitcher and muddle together. Add sugar and rum. Stir together.
- Pour mixture into 2 glasses filled with ice. Add ¼ cup club soda to each glass and serve.
