This summer salad is a simple mixture of oil, vinegar, sugar, salt and pepper along with sliced cucumbers, tomatoes, and onions. I love to serve it really, really cold and will often add ice cubes to it just before serving. So refreshing on a hot summer day!

- Use red onion instead of sweet onion.
- Use cherry tomatoes instead of regular tomatoes.
- Instead of apple cider vinegar, use rice wine vinegar, distilled white vinegar, or red wine vinegar.
- Olive oil can be used instead of vegetable oil.
- Peel the cucumbers or leave the skin on.

Marinated Cucumber, Tomato, and Onion Salad
Ingredients
- 1 cup water
- 1/2 cup apple cider vinegar
- 1/4 cup vegetable oil
- 1/4 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper
- 2 cucumbers,, sliced
- 3 tomatoes,, cut in wedges
- 1 sweet onion,, cut into rings
Instructions
- In a large bowl, whisk together water, vinegar, vegetable oil, sugar, salt and pepper.
- Add cucumbers, tomatoes, and onion and stir to coat.
- Refrigerate for at least 2 hours. Will keep for 3 to 5 days.

Awesome just like my mother in law used to make.
As I live by myself, I cut down on the ingredients. Also, after slicing the cucumber, I put it in a colander and salt it. Let it drain for 10 minutes, rinse and pat dry, and you will have much crisper cucumbers.
I received a request from a super Italian Chef and very close friend of mine to make him a big bowl of his so he can eat it when he comes home, he loved it. ๐
