These sweet and cheesy mini biscuits are hard to stop popping in your mouth! They taste almost just like Jim N Nicks Cheesy Biscuits and they are so easy to make!

We have a Jim N Nicks BBQ Restaurant near our house and I love to go there for a meal as often as possible. I love basically everything I’ve tried- the mammoth onion rings, the pulled pork and mac and cheese. But I especially love the complimentary mini muffins they bring to the table. We always get seconds, sometimes thirds.

I have a hard time not filling up on them before my meal comes. They are really cheesy and sweet, almost like a dessert.

This is a really simple recipe and they come really close to the real thing. You will need a mini muffin pan.

You could make them larger, but I love them bite-sized.

They’re made from super simple ingredients: flour, sugar, baking powder, and soda, buttermilk, butter and cheese. Plus a little vanilla extract.

It’s the vanilla extract that gives them that somethin somethin.

Jim 'n Nick's Cheesy Biscuits copycat

These sweet little cheese muffins taste just like Jim 'n Nicks. So good, they almost taste like dessert!
PREP: 10 minutes
COOK: 10 minutes
TOTAL: 20 minutes
SERVINGS: 10 servings


  • 1 1/2 cups all-purpose flour
  • 2/3 cup sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 egg, lightly beaten
  • 1/4 teaspoon vanilla extract
  • 4 tablespoons butter, melted
  • 1 1/4 cups shredded sharp cheddar cheese


  • Preheat oven to 400 degrees and spray mini muffin tin with cooking spray.
  • In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • Whisk buttermilk, egg, and vanilla extract together until smooth. Add to flour mixture along with melted butter. Stir just until combined. Fold in cheese.
  • Fill muffin tins with batter. Bake for 7 to 10 minutes or until firm on top.
  • Let cool 10 minutes and remove from muffin tins.
  • Serve warm.


Makes about 30 mini muffins.

    1. These biscuits are great! I’ve made them several times, and I always double this recipe. I also make them in regular sized muffins instead, because we’re greedy (and I only have 1 mini muffin pan, but I have more regular sized tins). I never have buttermilk on hand though, so I make my own with 1 cup of milk plus 1 tablespoon of vinegar (let it stand for at least 10 minutes at room temperature).

  1. I lived in Birmingham 7 years ago and I was spoiled by Jim N Nicks! You could stop at the drive through and grab a bag on the way home. Well now, living in Houston Texas, I do not have that luxury. I have been craving Jim N Nicks cheese biscuits for years now. These hit the spot and they were so easy! Absolutely an amazing copy cat! Thank you!

    This is the very closest recipe, that I have made, that tastes as close to Jim & Nick’s; as someone could possibly make. I’m from the South, and Jim & Nick’s signature sweet and delicious biscuits, are just one of those golden yummies, that could make anyone miss where they come from. The closest one to our family now, is several hours away though. I thought that my family and I were just going to have to remember fond memories, of one of our favorite places to have dinner with extended family and friends…but this recipe!!! You made the whole family happy tonight hun!!! Everyone, I followed this recipe exactly… I DID try it again, with a bigger muffin tin (regular muffin size) but both the family and I agree, that the flavor was better in the smaller size. DONT CHANGE A THING YALL!!!!
    We may have had to move around and away from our family, for our own military family, but this recipe, just brought ALL of us, a little closer to home!
    We are so grateful for the hard work that you put into, coming up with a copycat of one of our favvvvvvvorite foodies!

      1. Sure, just use a loaf pan or even a Caleb pan. You’ll just have a different shaped product. Sliced or cut into wedges. You’ll probably have yovafjust cooking time
