Chewy Texture

I love the chewy texture of these oatmeal cookies. A high ratio of oats to flour gives them a wonderful texture and flavor. They go great with a glass of milk or warm apple cider.

How To Make Apple Toffee Oatmeal Cookies

  1. In a large bowl, whisk together the dry ingredients.
  2. In a medium bowl, whisk together the brown sugar, melted butter, applesauce, and egg.
  3. Add butter mixture to flour mixture and stir just until combined.
  4. Stir in chopped apple, toffee bits, and walnuts.
  5. Measure out 1 1/2 tablespoons of batter for each cookie and place on parchment-paper lined baking sheets. Note: They will hardly spread so you don’t need to space them far apart. Bake for 10 to 12 minutes.
  6. Let cool and then drizzle with glaze. Bet you can’t eat just one!

Type of Apples To Use

I most like the tartness of Granny Smith apples in this recipe, but you could use Honeycrisp or Gala instead.

How To Store

Store in an airtight container at room temperature for 3 days or freeze for up to 2 months. To freeze, cool cookies completely and wrap individually. Then place in a freezer bag.

Can I Use Quick Oats Instead?

Yes, I like the super chewy texture of old-fashioned oats, but you can use quick-cooking oats for a softer texture.

You can use pecans instead of walnuts.

Be sure to finely dice the apples. The texture of the cookies will be much better this way.

Ingredients

  • 2 cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon apple pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup packed light brown sugar
  • ¼ cup unsalted butter, melted and cooled
  • ¼ cup applesauce
  • 1 large egg
  • ½ cup finely chopped Granny Smith apple
  • cup toffee bits
  • ½ cup chopped walnuts

Glaze

  • 1 cup powdered sugar
  • 2 to 3 tablespoons heavy cream

Instructions

  • Preheat oven to 350 degrees and line 2 rimmed baking sheets with parchment paper.
  • Whisk together the first 6 ingredients in a large bowl.
  • In a medium bowl, whisk together brown sugar, melted butter, applesauce, and egg.
  • Add butter mixture to flour mixture and stir just until combined.
  • Stir in chopped apple, toffee bits, and walnuts.
  • Measure out 1 1/2 tablespoons batter for each cookie and place on prepared baking sheets.
  • Bake for 10 to 12 minutes. Let cool 5 minutes and then remove to wire rack to cool completely.
  • In a small bowl, whisk together powdered sugar and heavy cream. Drizzle over cooled cookies.
