Slow Cooker Garlic Parmesan Chicken- a creamy Parmesan sauce flavored with garlic, onion, mushrooms, and spinach makes this recipe a great family meal.
The chicken cooks in just 3 1/2 to 4 hours. Tastes great served over white rice. You could also serve it over mashed potatoes or noodles. Green peas, steamed broccoli or green beans make a great side. This is comfort food the whole family will enjoy.
How To Make Slow Cooker Garlic Parmesan Chicken
- Layer the onion, garlic, chicken, and mushrooms in the slow cooker.
- Sprinkle on the seasonings.
- Pour in the chicken broth and melted butter.
- Cover and cook on LOW for 3 to 3 1/2 hours.
- Whisk together the evaporated milk and flour and add to the slow cooker. Cook on HIGH for 30 minutes. This step is to thicken the sauce. Check the chicken before adding in the flour mixture. If it is already cooked through, remove the chicken from the slow cooker. The chicken is done when it reaches a temperature of 165 F.
- Remove the chicken if you haven’t already and whisk in the parmesan. Stir in the spinach leaves.
- Spoon sauce over chicken to serve.
Recipe Tips
- I use a 6-quart slow cooker for this recipe.
- For extra seasoning add a teaspoon of dried Italian seasoning or dried basil.
- The mushrooms can be left out if you don’t like them.
- Chicken thighs can be used instead of chicken breasts but keep in mind they take a little longer to cook.
- If you want this dish spicy, double the amount of crushed red pepper flakes.
- I like to cook chicken breasts on LOW in the slow cooker. Too often they turn out dry and overcooked if they are cooked on the HIGH setting. The chicken should only need about 4 hours of cooking time total.
- If your chicken breasts are very large, you might want to cut them in half before putting them in the slow cooker.

Made this last night for dinner. Excellent over rice and our kids loved eating the spinach and mushrooms. I cut the thigh meat to help with cooking time and this was wonderful. Will certainly share and make again. This is a perfect dish to add whatever vegetables you have left over.
