The extra ingredients added to the cake mix make it taste wonderfully homemade. Starting with a box of cake mix is like having insurance. You’re taking something good and turning it into something much better.

The addition of buttermilk, sour cream, vanilla extract, and almond extract builds up the flavor and hides the taste of the cake mix that some people find so off-putting. The sour cream is the ingredient that really elevates the cake, adding lots of moisture. I also love the addition of almond extract. You just want to use a little. Almond extract is very intense and can be overpowering.

  • You can use any brand of cake mix. I prefer Duncan Hines or Betty Crocker.
  • Can be turned into cupcakes. Just reduce the baking time to approximately 15 minutes.

With a delicious homemade taste, no one will know this cake started with a boxed cake mix.

Ingredients

Batter

  • 1 (15.25-ounce) box white cake mix
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup water
  • 1/2 cup buttermilk
  • 3/4 cup sour cream
  • 4 large egg whites
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract

White Icing

  • 4 ounces cream cheese,, softened
  • 1/2 cup butter,, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 3 cups confectioners' sugar
  • 1 tablespoon milk
  • sprinkles,, optional

Instructions 

  • Preheat oven to 325 degrees and grease a 9x13-inch baking pan.
  • In a large bowl, whisk together cake mix, flour, sugar, and salt.
  • Add water, buttermilk, sour cream, egg whites, vanilla extract, and almond extract.
    Use an electric mixer to mix at medium-low speed until evenly mixed.
  • Pour batter into prepared pan. Bake for 26 to 30 minutes. Let cool.
  • To make icing, in a large bowl beat cream cheese and butter until smooth and creamy.
  • Add the extracts, powdered sugar and milk. Beat at medium speed until combined.
    Beat at high speed for 1 minute.
  • Spread icing on cake. Decorate with sprinkles if desired.
