Warm weather isn’t too far away and that means it’s time to start thinking about picnics and potato salads. Every picnic and cookout needs a good potato salad and this one is one of the best potato salads.

Loaded Ranch Potato Salad is super creamy and rich and has tons of flavor thanks to a packet of Ranch seasoning mix. I’m obsessed with anything ranch so this is my favorite potato salad.

A mixture of sour cream and mayonnaise makes this the creamiest potato salad ever.

In addition, there’s also chopped green onion, cheddar cheese, and lots of crumbled bacon.

 

 

Who can resist anything with cheddar cheese and bacon? Not me.

 

 

I like to use red potatoes for this recipe. They have a texture that is perfect for potato salads and I love the fact that there’s no need to peel them. Huge timesaver! I think the skin actually makes the potato salad more visually appealing.

Ingredients

  • 3 pounds red potatoes,, halved or quartered
  • 1 (8-ounce) container sour cream
  • 1/2 cup mayonnaise
  • 1 (1-ounce) package Ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 3 green onions,, sliced
  • 6 slices bacon,, cooked and crumbled

Instructions 

  • Place potatoes in a large pot and cover with water. Bring to a boil and simmer for about 15 minutes, or until tender. Drain well and let cool.
  • In a large bowl, stir together sour cream, mayonnaise, and Ranch seasoning mix.
  • Add potatoes, cheddar cheese, and green onions and stir well.
  • Sprinkle bacon on top. Refrigerate until chilled.

    If you like ranch dressing this is the best potato salad. I have made this using hidden valley ranch dressing and a dash of mustard, regular or dry. This eliminates sour cream and the dry ranch.

    My daughter loves this recipe!! I used the ranch dip already mixed up (omitted the sour cream and ranch seasoning packet) and I also saved a small handful of the green chives and I used a small bag of the Real Oscar mayer bacon and mixed all together but a small handful then add the small handful of the bacon and the chives to sprinkle on the top. She has me making this for all of her occasions and friends cookouts.

      I had this@ a friend’s house from Church, on my goodness it was so DELICIOUS ๐Ÿ˜‹๐Ÿ˜‹ the only difference I would do is after frying the bacon ๐Ÿฅ“ I would add the boiled potatoes to the greace, to give it more flavor, add more green onions, I would make my own ranch dip, to maybe cut down on sodium. I’m definitely going to make this for my daughter she’s going to love it ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹ I’m also going to top with more bacon & green onions…

    I had this recipe for potato salad not refrigerated, but put in the oven until cheese melted and served warm. The whole baking dish was gone in no time, delicious!
