My automatic response to anything my kids ask me to do is – Write it on a piece of paper and put it on the kitchen counter.
Otherwise there’s just no chance it’s getting done. I can’t seem to remember anything anymore.
There are too many thoughts and ideas darting around in my mind, colliding with each other. It’s like my mind has turned into one of those pinball machines.
So I make endless lists. And then I forget where I put them.
I was so focused on making these Jalapeno Watermelon Margaritas look pretty in a hurry because I wanted to take pictures of them outside and it was a bazillion degrees, so I figured I had about 3 minutes before all the ice melted.
And I forgot to coat the rims of the glasses with salt.
That just can’t happen with Margaritas y’all.
Especially watermelon margaritas. Salt does something magical to watermelon. It really makes it come alive.
But luckily they were still delicious. And they were plenty strong.
After a few sips, everything was right in the world again. Fears of having to be sent away to a home for people with early dementia slipped away.
Memory problem. What memory problem?
You’ve probably noticed that the heat of jalapeno peppers can vary. A LOT. Like from so mild you think it’s just a bell pepper in the shape of a jalapeno, to somebody call the fire department. Depending on the heat of your jalapeno, you may want to infuse the tequila for just an hour or up to a full day. The best way to decide is to stick your pinky finger in every so often and take a little taste.
Jalapeno Watermelon Margarita
Ingredients
- 1 jalapeno,, thinly sliced
- 3/4 cup white tequila
- 8-10 cups watermelon chunks,, a large dice
- 1/2 cup fresh lime juice
- 1/3 cup Triple Sec
- 1/4 cup simple syrup
- salt,, chili powder, and lime juice for salting rims of glasses
Instructions
- Place tequila and about 4 slices of jalapeno in a glass measuring cup and place in the refrigerator for 1 to 4 hours depending on how spicy your jalapenos are and how spicy you want the tequila to be. Take a taste after 1 hour and decide whether it is spicy enough. If so, remove jalapenos.
- Place watermelon (you may need to do it in batches) in a blender and blend until liquified.
- Pour watermelon through a fine-meshed strainer, pressing on it with the back of a spoon to get all the liquid through. Measure out 3 cups of watermelon juice.
- In a large pitcher, combine the 3 cups watermelon juice, tequila, lime juice, Triple Sec, and simple syrup.
- Place salt with a little chili powder mixed in on a plate. Coat rims of 4 glasses with lime juice and dip in salt mixture.
- Fill the glasses with ice and pour Margaritas into glasses. Garnish with lime slices and jalapeno slices if desired.

Yummy!! I made watermelon margaritas recently too and they were SOOO good! I love the idea of adding jalapenos for a little kick. I used to frequent a certain Mexican restaurant for their mango habanero marg— love the sweet & hot with tequila!
Even though we have set the summers aside for a while since its monsoon here, yet I almost felt like grabbing a glass full straight off the screen.

I make lists merely to prioritize my thoughts, because yeah they are all running around like a bunch of 2 yr olds on a sugar high. So if I can’t find my list, it’s okay they did their job. And if I do—WooWhoo. I would make this merely for the looks of them if nothing else. They are so dang exotic looking that is uplifting right there.
