Otherwise there’s just no chance it’s getting done. I can’t seem to remember anything anymore.

I was so focused on making these Jalapeno Watermelon Margaritas look pretty in a hurry because I wanted to take pictures of them outside and it was a bazillion degrees, so I figured I had about 3 minutes before all the ice melted.

And I forgot to coat the rims of the glasses with salt.

Especially watermelon margaritas. Salt does something magical to watermelon. It really makes it come alive.

But luckily they were still delicious. And they were plenty strong.

After a few sips, everything was right in the world again. Fears of having to be sent away to a home for people with early dementia slipped away.

Jalapeno Watermelon Margaritas

You’ve probably noticed that the heat of jalapeno peppers can vary. A LOT. Like from so mild you think it’s just a bell pepper in the shape of a jalapeno, to somebody call the fire department. Depending on the heat of your jalapeno, you may want to infuse the tequila for just an hour or up to a full day. The best way to decide is to stick your pinky finger in every so often and take a little taste.

Jalapeno Watermelon Margarita

Sweet and spicy margaritas made with fresh watermelon puree, lime juice, Triple Sec, and jalapeno-infused tequila
PREP: 1 hour 10 minutes
SERVINGS: 4

Ingredients

  • 1 jalapeno, thinly sliced
  • 3/4 cup white tequila
  • 8-10 cups watermelon chunks, a large dice
  • 1/2 cup fresh lime juice
  • 1/3 cup Triple Sec
  • 1/4 cup simple syrup
  • salt, chili powder, and lime juice for salting rims of glasses

Instructions

  • Place tequila and about 4 slices of jalapeno in a glass measuring cup and place in the refrigerator for 1 to 4 hours depending on how spicy your jalapenos are and how spicy you want the tequila to be. Take a taste after 1 hour and decide whether it is spicy enough. If so, remove jalapenos.
  • Place watermelon (you may need to do it in batches) in a blender and blend until liquified.
  • Pour watermelon through a fine-meshed strainer, pressing on it with the back of a spoon to get all the liquid through. Measure out 3 cups of watermelon juice.
  • In a large pitcher, combine the 3 cups watermelon juice, tequila, lime juice, Triple Sec, and simple syrup.
  • Place salt with a little chili powder mixed in on a plate. Coat rims of 4 glasses with lime juice and dip in salt mixture.
  • Fill the glasses with ice and pour Margaritas into glasses. Garnish with lime slices and jalapeno slices if desired.

Notes

To make a simple syrup, combine equal parts sugar in water in a small saucepan and heat over medium heat, stirring frequently until sugar is dissolved. Remove from heat and cool. Can be stored in refrigerator for future use.

    OMG This totally happens with me too! Especially when you know that you need to take photos quick. I always end up forgetting something!!!! I totally agree with you on the salt and watermelon combination!!! I always eat watermelon rubbed with a little salt.The flavor is just indescribably delicious! Ditto for oranges too! <3 I totally have to try this margarita! I loveeee spicy EVERYTHING and the heat from the jalapenos and the sweetness//saltiness from the watermelon …Ohhhh just thinking about it makes me salivate! <3

    I’m a the same way. My kids ask for something I immediately say write it down or I’ll forget. My husband need to me to call the computer shop for him. I didn’t write it down, he asked for 3 days straight if I had called. Finally, I wrote it down and remembered to make the call. I so need to slow down. This margarita would be a great start too. Love the idea of infusing the tequila! I have a little watermelon left, probably enough to give this a try 😀

    Yummy!! I made watermelon margaritas recently too and they were SOOO good! I love the idea of adding jalapenos for a little kick. I used to frequent a certain Mexican restaurant for their mango habanero marg— love the sweet & hot with tequila!
