Instant Pot Low Country Boil is a wonderfully spicy one pot meal with lots of red potatoes, corn, sausage, and shrimp. The ingredients soak up so much flavor in a short amount of time thanks to pressure cooking. Serve with some hot sauce and melted butter for dipping and you have a fantastic food spread for spring and summer entertaining.

I like to use both liquid shrimp and crab boil and Cajun or Creole seasoning to flavor this Instant Pot Low Country Boil. The potatoes, corn, and sausage get cooked under high pressure for 4 minutes. The shrimp don’t need long to cook so they get stirred in at the end and the residual heat cooks them. Once everything gets drained, pour it out on a large serving platter or some newspapers and give it another sprinkling of seasoning.

Ingredients

  • 1 1/2 pounds red potatoes,, on the small side
  • 1 (14-ounce) package smoked sausage,, cut into 2-inch pieces
  • 3 ears corn,, cut into thirds
  • 1 tablespoon liquid shrimp and crab boil
  • 3 teaspoons creole or cajun seasoning,, divided
  • 1 1/4 pounds medium to large shrimp
  • 1/2 cup butter,, melted
  • 1/2 teaspoon garlic powder

Instructions 

  • Place potatoes, sausage, and corn in the Instant Pot. Pour in 3 cups of water. Add the liquid shrimp and crab boil and 2 1/2 teaspoons of creole seasoning.
  • Put lid on Instant Pot and turn valve to "sealing". Set Instant Pot to Pressure Cook on HIGH for 4 minutes. Keep in mind it will take some time for the pressure to build up.
  • After the 4 minutes is up, do a quick pressure release. Once the pin drops, remove lid. Add the shrimp and sprinkle the remaining 1/2 teaspoon seasoning on them. I like to take the corn out to make more room for the shrimp. Stir in the shrimp. Replace the lid. You want the Instant Pot either off or on warm. Let the residual heat cook the shrimp for about 3 to 4 minutes.
  • Remove everything from the Instant Pot with a slotted spoon and place on a serving platter. If desired, sprinkle on more Creole or Cajun seasoning.
  • Place butter and garlic powder in a microwave-safe bowl. Microwave until butter is melted. Serve with the shrimp boil. The shrimp and potatoes taste wonderful dipped in it.

    We all loved it – used 1 cup water & 1 cup white wine; didnโ€™t have liquid shrimp & crab boil, just used the creole spices. Once done in Instant pot, & removed to baking sheet, I melted 3-4 tbsp butter, mixed in garlic, paprika, and oregano and drizzled over everything and put in 400 degree oven for 5-10 min – yum!!

    I have an 8 quart and I would like to double the recipe for the low country boil. Do I double the water and double the cooking time?

      You’ll need to double the water, but the cooking time will be the same… with either quantity, once the pot comes to pressure (i.e., temperature) all the food is cooked at that temperature.

    We tried two different batches of this. One batch had half the liquid shrimp boil, and half the cajun seasoning. This was the kid’s version. They said it was still a little spicy, but they ate it fine. The adult version turned out SO good! And just the right amount of spice.

    My only complaint was that the shrimp didn’t cook enough while it was on the, “Keep Warm” setting. I had to turn it to the Saute mode for a minute or two to get them fully cooked.

    Will make again!

    I used the Ninja Foodi. I could not find liquid boil at my local store. I used seasoning in the bag. It worked perfectly. Thank you for the helpful instructions with pressure cooking. I’m new to it. My family loved the flavors. Tasted like home!
