There’s no better way to warm up on a cold winter night than with a hot bowl of chili. Spoonful after spoonful of this thick and hearty chili will warm you from head to toe.

The secret to this chili is a pouch of Knorr® Fiesta Sides™- Mexican Rice. With Mexican seasoning already mixed in, it adds tons of flavor and helps make the chili a more filling and economical meal. Some chipotle chili powder, which I find has so much more flavor than regular chili powder, gives the chili the perfect amount of heat and a nice smokiness. I add a can of corn to get an extra serving of vegetables and I love how the sweetness of the corn contrasts with the spice of the chili. You could add a 15oz can of black beans instead of the corn, or in addition to it if you like beans in your chili for added texture.

Not only is Chipotle Chili with Rice a super timesaver in the kitchen, but the whole thing can be cooked in one pot. I love hardly having any dishes to clean up!

Typically chili recipes have a gazillion ingredients so I love that by using a pouch of Knorr® Rice Sides™as a base, I only have to use 7 other ingredients in the chili to get maximum flavor. Less really is more sometimes.

There are just 3 simple steps to this recipe.

Chipotle Chili and Rice

Step One

First you brown a pound of lean ground beef, along with a chopped onion, and some minced garlic. Use a wooden spoon to get the ground beef crumbled up really well.

Have some toppings available so everyone can customize their bowl of chili. Shredded cheese, sour cream, black olives, and green onions are favorites of mine.

Knorr® Rice Sides™ can be used in a variety of ways to make easy, quick meals. They come in so many different flavors and make the perfect base for a recipe because there’s no need to add much additional seasoning. Just a protein and some veggies. Visit the Knorr® website for more quick and easy recipes that are family-friendly.

  1. Wow! This looks great. And I love the rice in there. Isn’t chipotle chili powder the best? I have a biscuit recipe that I always put it in. I want a bowl of this right now!?
