Today I’m super excited to tell you about a way we can all join together and help feed thousands of hungry children. Because as much as I wish everyone had Loaded Mashed Potato Casserole on their dinner plate, the sad truth is many people, including children do not even have a dinner to eat at all.

But it ’tis the season for giving and this year  we can all help Challenge Dairy and UNICEF feed hungry children and raise awareness for childhood malnutrition by pinning a recipe from the Pinterest Board “Pin a Recipe, Feed A Child”. For every recipe pinned from this board, Challenge Dairy will donate a meal for a child in need to the UNICEF Foundation. Challenge Dairy has committed to donating up to 75,000 meals through this campaign which runs from November 15-December 31, 2105.

It is estimated that childhood malnutrition results in the unnecessary loss of nearly 3 million lives a year and approximately half of all deaths under the age of 5 are due to malnutrition. Those numbers are staggering. I don’t know about you but I have a hard time even wrapping my head around them.

Ingredients

  • 3 pounds Yukon Gold potatoes
  • 1 tablespoon salt
  • 1 (8-ounce) package cream cheese,, softened
  • 1/4 cup warm milk
  • 4 tablespoons butter,, cut into cubes and softened
  • 1/4 cup sour cream
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 green onions,, sliced
  • 1 (8-ounce) package Cheddar cheese,, shredded
  • 4 slices bacon,, cooked and crumbled

Instructions 

  • Peel potatoes and cut into quarters. Place in a large pot and cover with one inch of water. Add salt and place over high heat. When water comes to a boil, reduce heat to maintain a simmer. Cook for 20 minutes or until potatoes are soft when poked with a fork. Drain well.
  • Place potatoes in a large mixing bowl with cream cheese, milk, butter, sour cream, seasoned salt, garlic salt, and pepper. Use an electric mixer to mix until smooth.
  • Stir in half of green onions and half of cheddar cheese and transfer to a lightly buttered casserole dish. Scatter remaining green onions, cheese and the bacon on top.
  • Bake at 350 degrees for 30 minutes.
