What Is Cubed Steak?

Cubed steak is an inexpensive cut of meat that is cut from the top round or top sirloin. It is typically a very tough piece of meat but it has been tenderized to break up the muscle fibers. It is very recognizable because it has a waffled surface from the tenderizing process.

Cubed Steak with Onion Gravy

The pieces of cubed steak are dredged in a little flour that’s been seasoned with black pepper and garlic salt and then pan-fried in some vegetable oil. A cast iron pan is best, but any type of pan will work. The gravy is super easy to make from the pan drippings.

Cubed Steak with Onion Gravy is definitely worthy of a place on your regular dinner rotation!

Make It Spicy

To make this recipe spicy, add a pinch or two of cayenne pepper to the gravy.

Ingredients

  • 1 1/2 pounds cubed steak
  • 1/3 cup flour
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Vegetable oil
  • 1 large onion,, sliced
  • 1 (14-ounce) can beef broth
  • 1 package dry onion soup mix

Instructions 

  • Combine flour, garlic salt, and black pepper in a pie plate or shallow dish. Dredge both sides of cubed steak in flour mixture.
  • Heat oil in a large skillet (preferably cast iron) over medium-high heat. Add steak (cooking in 2 batches if necessary). Cook 5 minutes per side. Remove steak from skillet and set aside.
  • If you want to thicken the gravy some, add a few teaspoons of leftover flour from dredging the steak to the drippings in the pan.
  • Add onion, broth, and onion soup mix to the drippings in the pan. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan.
  • Bring to a simmer and cook until onions are soft.
  • Return steak to pan to warm. Serve with mashed potatoes.

    I used the 50% low sodium beef broth. It was fantastic! We did use mushrooms, we used baby bellas. Net time I will go with white mushrooms. It just seemed a bit to beefy with the portabella mushrooms. Other than that I would not change a thing. What an inexpensive meal fit for company. Garlic mashed potatoes and fresh sauteed greens. Thank you for sharing this one, it’s a keeper.

          It is steak that has been pounded with a meat mallet to tenderize. Some meat cutters will do this before it is placed out for sale.

          You can buy chuck steak and ask the butcher to run it through the cuber.

            If Iโ€™m not mistaken, round steaks are typically cubed. Chuck steak has better uses because of the fat content.

    It was very good but I thought it was too salty. I think I would cut the soup mix in half and possibly try a low sodium beef broth. Someone suggested mushrooms. I might try that next time!

    Real good. Made 8 or 9 cubed steaks. Doubled the gravy mixture except still only used one large onion but added mushrooms. Will definately make again.

    For those who say the meat was tough, I’ve always simmer until tender. Some experienced saltiness, I believe that is from the onion mix, rather than the broth. Tasty & quick meal. This is one of the 1st recipes I learned from my mom.

    With ALL DUE RESPECT….
    Either ir’s just me, or, it takes quite a bit longer than 25 minutes of prep AND cook time. It took me almost 50 minutes. The vast majority being the simmering of the onions. (Maybe, I was afraid of burning it! Lol)
    However…I will say this…IT WAS MAGNIFICENT!!!

    P.S. I’m a 56 year old man whose wife of 36 years got a boyfriend and walked out on me, 17 months ago. So…it probably WAS me! ๐Ÿ˜‰๐Ÿ˜๐Ÿ˜Š Ixm still new to all of this.
    I did not see where to rate stars…but, my rating isn 5 STARS! NO, SIX!!
