The secret to this chili is a pouch of Knorr® Fiesta Sides™- Mexican Rice. With Mexican seasoning already mixed in, it adds tons of flavor and helps make the chili a more filling and economical meal. Some chipotle chili powder, which I find has so much more flavor than regular chili powder, gives the chili the perfect amount of heat and a nice smokiness. I add a can of corn to get an extra serving of vegetables and I love how the sweetness of the corn contrasts with the spice of the chili. You could add a 15oz can of black beans instead of the corn, or in addition to it if you like beans in your chili for added texture.

Not only is Chipotle Chili with Rice a super timesaver in the kitchen, but the whole thing can be cooked in one pot. I love hardly having any dishes to clean up!

Typically chili recipes have a gazillion ingredients so I love that by using a pouch of Knorr® Rice Sides™as a base, I only have to use 7 other ingredients in the chili to get maximum flavor. Less really is more sometimes.

There are just 3 simple steps to this recipe.

Step One

First you brown a pound of lean ground beef, along with a chopped onion, and some minced garlic. Use a wooden spoon to get the ground beef crumbled up really well.

Add chipotle chili powder, a can of tomato puree, and a can of beef broth. Let simmer for about 10 minutes.

Step Three

Add corn and 1 pouch of Knorr® Fiesta Sides™ – Mexican Rice. Let simmer 7 minutes. Knorr® Rice Side™

only takes 7 minutes to cook.

Ingredients

  • 1 pound lean ground beef
  • 1 small onion,, chopped
  • 2 cloves garlic,, minced
  • 1 to 1 1/2 teaspoons chipotle chili powder,, depending on how spicy you want it
  • 1 (28-ounce) can pureed tomatoes
  • 1 (14.5-ounce) can beef broth
  • 1 pouch Knorrยฎ Fiesta Sidesโ„ข- Mexican Rice
  • 1 (11-ounce) can corn,, drained

Instructions 

  • Place ground beef, onion, and garlic in a lightly greased Dutch oven. Cook over medium heat until ground beef is browned, breaking it apart with a wooden spoon as it cooks.
  • Add chili powder, tomatoes, and beef broth and simmer for 10 minutes.
  • Add Knorrยฎ Rice and corn and cook another 5 to 7 minutes.
