What a great way to sneak in vegetables with picky eaters!! This meal is eye catching, with beautiful colors and textures but the main idea is the main idea; meaning it’s truly delicious and flavorful. I like my tomato sauce slightly sweet so there was a wonderful contrast between the sweet and spicy. This is a keeper!

I doctored this recipe up. Growing up an Italian family my grandfather being from Sicily made sausage and peppers at least once a week. this recipe definitely needed more seasoning, two cans of diced tomatoes which I used fire roasted. I also added 2 tablespoons of tomato paste. I boiled the sausages first, because that removes the fat from the sausage and they fry better without having your meal ending up being nothing but an oily mess.

I love this recipe. I don’t have to change anything. Has anyone tried making it in a slow cooker?

    1. Shandi says:

Yes, I still brown the sausages and saute the veggies a little first

  9. Diane says:

Did you drain the diced tomatoes?
