What Is Cubed Steak?

Cubed steak is an inexpensive cut of meat that is cut from the top round or top sirloin. It is typically a very tough piece of meat but it has been tenderized to break up the muscle fibers. It is very recognizable because it has a waffled surface from the tenderizing process.

Cubed Steak with Onion Gravy

The pieces of cubed steak are dredged in a little flour that’s been seasoned with black pepper and garlic salt and then pan-fried in some vegetable oil. A cast iron pan is best, but any type of pan will work. The gravy is super easy to make from the pan drippings.

Cubed Steak with Onion Gravy is definitely worthy of a place on your regular dinner rotation!

Make It Spicy

To make this recipe spicy, add a pinch or two of cayenne pepper to the gravy.

Ingredients

  • 1 1/2 pounds cubed steak
  • 1/3 cup flour
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Vegetable oil
  • 1 large onion,, sliced
  • 1 (14-ounce) can beef broth
  • 1 package dry onion soup mix

Instructions 

  • Combine flour, garlic salt, and black pepper in a pie plate or shallow dish. Dredge both sides of cubed steak in flour mixture.
  • Heat oil in a large skillet (preferably cast iron) over medium-high heat. Add steak (cooking in 2 batches if necessary). Cook 5 minutes per side. Remove steak from skillet and set aside.
  • If you want to thicken the gravy some, add a few teaspoons of leftover flour from dredging the steak to the drippings in the pan.
  • Add onion, broth, and onion soup mix to the drippings in the pan. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan.
  • Bring to a simmer and cook until onions are soft.
  • Return steak to pan to warm. Serve with mashed potatoes.

    I saw the cubed steak in the super market I remember when I was younger it came out tough. So when I saw this recipe I figured I would give it a try. It was delicious and tender. My husband loved it also.

    This recipe is true to form!!
    My dad cooked cubed steaks the same way!! Dredged in flour.
    I cooked the onion in a cast iron skillet for 15 minutes, I used olive oil.
    I removed them.
    I seasoned the meat with salt and pepper, onion powder, and a little splash of Worcestershire sauce,
    then I dredged them in the seasoned flour.
    I cooked the meat till a temperature of 145f. ( I used some leftover bacon grease!!)
    I took the meat out got the pan hot and put some beef broth in to break up the yummy stickings!!
    I put the rest of the broth in along with the soup mix. Brought the pan to a boil, I added 2 tablespoons of cornstarch ( mixed well in a 1/4 cup of cold water. To the pan.
    Let it simmer a few minutes.
    Return the meat to warm up!! 5 more minutes!
    Served with mashed taters and mixed veggies.

    I made this tonight. I changed it from my โ€œmust tryโ€ to my โ€œfavsโ€ folder. It was amazing! I bought a side of beef and I always make chicken fried steak with the cube steaks. I wanted to try something different. This is my new fav way of preparing cube steaks. I had to improvise because I didnโ€™t have the onion soup dry mix so I used a can of campbells French onion soup, added half can of water and sprinkled with some brown gravy mix. Absolutely fabulous! I served it with ranch mashed potatoes and sautรฉed squash. Thanks for sharing! โค๏ธ

    Awesome recipe!!…I saw the cube steaks at the grocery and thought I would try it..I am a novice when it comes to cooking but this recipe was easy to follow…The meal was delicious. I had the cube steaks with some garlic mashed potatoes. What a meal!!!…..Thanks again for the recipe..
