Cubed Steak with Onion Gravy is a quick and easy meal that is an economical way to serve beef to your family. Cubed steaks are coated in flour and pan-fried. This country-style steak is covered in a super flavorful onion gravy that gets lots of onion flavor from not only a large sliced onion, but a packet of dry onion soup mix.

The whole meal can be made start to finish in about 20 minutes. I love to serve Cubed Steak with Onion Gravy over mashed potatoes to soak up all that yummy gravy with a side of peas. Are you a fan of peas mixed into your mashed potatoes? I love it!
What Is Cubed Steak?
Cubed steak is an inexpensive cut of meat that is cut from the top round or top sirloin. It is typically a very tough piece of meat but it has been tenderized to break up the muscle fibers. It is very recognizable because it has a waffled surface from the tenderizing process.
The pieces of cubed steak are dredged in a little flour that’s been seasoned with black pepper and garlic salt and then pan-fried in some vegetable oil. A cast iron pan is best, but any type of pan will work. The gravy is super easy to make from the pan drippings.

Cubed Steak with Onion Gravy
Equipment
Ingredients
- 1 1/2 pounds cubed steak
- 1/3 cup flour
- 1/2 teaspoon garlic salt
- 1/2 teaspoon black pepper
- 1/2 cup Vegetable oil
- 1 large onion,, sliced
- 1 (14-ounce) can beef broth
- 1 package dry onion soup mix
Instructions
- Combine flour, garlic salt, and black pepper in a pie plate or shallow dish. Dredge both sides of cubed steak in flour mixture.
- Heat oil in a large skillet (preferably cast iron) over medium-high heat. Add steak (cooking in 2 batches if necessary). Cook 5 minutes per side. Remove steak from skillet and set aside.
- If you want to thicken the gravy some, add a few teaspoons of leftover flour from dredging the steak to the drippings in the pan.
- Add onion, broth, and onion soup mix to the drippings in the pan. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan.
- Bring to a simmer and cook until onions are soft.
- Return steak to pan to warm. Serve with mashed potatoes.

This is a great recipe that I use very often. I dropped the onion soup mix. For me it makes the gravy too strong and it is perfect without the extra flavor.
My family absolutely loved this recipe! My husband bought this steak by accident and didnโt know what to do with it so I looked it up on google and found this recipe. It was quick and simple and so good! I followed the recipe almost exactly except for I switched beef broth for beefy mushroom soup. Served it with mashed potatoes and for those who like rice instead I made a pot of white rice.
I have never made cube steak before because I’ve been served this many times & never liked it much. The other day I found cube steak for a ridiculously low price so I bought it. I researched & researched & stumbled across this recipe. It’s the best! I used my beef & onion gravy but did EVERYTHING else the same. I served it over homemade potatoes. It was a hit! I will make this often. THANK YOU!

I didnโt have soup mix but all I did was look up the soup mix recipe and put in the spices needed. Was fantastic. I love that itโs not too breaded. This is a great recipe! Good job.
I just made this. It is very good. Thank you. I didn’t have any soup mix though. Next time I will add Worcestershire, the soup mix, green peppers and mushrooms. I omitted the onion soup mix and used a tsp of โBetter than Bouillonโ to jack up the beef flavor.
I didnโt use the beef broth and used 2 thinly sliced onions and a drained can of white mushrooms, I added 4 oz of water.
I let the skillet of beef simmer for 15 minutes, turned the meat and let it simmer until the meat was super tender (about 15 more minutes)
Served it with fresh peas, homemade sour dough bread and garlic mashed potatoes.
Totally awesome dinner, my guests were almost licking their plates
I have never left a review before but this was seriously delicious! Like amazingly delicious! I made the gravy with the drippings and some flour, onion soup and beef bouillon base/water. Itโs smack yourself good! Super easy and tons of rich flavor! Definitely doing this again and it beats plain old cube steak in the crockpot with some beef gravy. Thanks for an amazing recipe!
Very delicious! Though I used low sodium beef broth, the onion soup mix did make it a tad too salty for our taste. Next time, I’d use less of the mix–or try none at all. The sauce already has a large onion in it, so the onion soup mix might be overkill. I used a T of Worcestershire sauce in it to jazz it up a bit…I simmered the beef for 20 minutes in the gravy to make sure it was fork tender…and it was!
