Orzo Pasta Salad with Grilled Chicken and Roasted Vegetables is a one bowl meal that’s full of flavor. It’s loaded with zucchini, red onion, red bell pepper, and cherry tomatoes, plus a little crumbled feta cheese and fresh dill. Everyone in my family loves pasta salad so much that I often transform it from a side dish into a main dish by adding a protein.
Since this pasta salad is heavy on fresh vegetables and lean protein, it’s a balanced meal you can feel good about feeding your family.
This is a meal that can easily be made start to finish in 30 minutes, making it perfect for a meal on a busy day. It can be served warm, at room temperature, or chilled so you can even make it a day in advance.
Wish-Bone® Italian Dressing provides the flavor both for the roasted vegetables and serves as the dressing for the pasta salad. I love its tangy and robust flavor full of herbs and seasonings. It gives a zesty burst to whatever you put it on. It also makes a wonderful marinade for chicken.
I diced up a few zucchini, a red bell pepper, and a red onion and coated them in a little Wish-Bone® Italian Dressing and then roasted them until golden. About halfway through, I added some cherry tomatoes. A short roasting time really helps bring out the flavor of out of season tomatoes.
Once roasted, the vegetables get tossed with some orzo that’s been tossed with Wish-Bone® Italian Dressing.
To make this one bowl meal even simpler to make for a weeknight meal, I used Tyson® Grilled & Ready® Chicken which can easily be found in the freezer at your local Walmart. I love that it is precooked and already cut into slices and all I need to do is heat it in a pan for a few minutes and it is ready to be added to my recipe.

Orzo Pasta Salad with Chicken and Roasted Vegetables
Ingredients
- 2 zucchini,, ends trimmed and cut into half-moon shapes
- 1 red bell pepper,, cut into bite-sized pieces
- 1 red onion,, coarsely chopped
- 1/4 cup Wish-Bone® Italian Salad Dressing
- 1 1/2 cups cherry tomatoes
- 1 1/4 cups uncooked orzo
- 1/4 cup Wish-Bone® Italian Salad Dressing
- 1/2 package Tyson® Grilled & Ready® Chicken
- 1/4 cup feta cheese
- 1 tablespoon chopped fresh dill
Instructions
- Preheat oven to 450 degrees.
- Place zucchini, red bell pepper, and red onion on a baking sheet. Drizzle with 1/4 cup Wish-Bone® Italian Salad Dressing. Toss to coat well.
- Roast in oven for 15 minutes. Remove from oven, add tomatoes to baking sheet, give everything a quick stir and return to oven for 10 minutes.
- Meanwhile, cook orzo according to package directions. Drain and transfer to a large bowl. Toss orzo with 1/4 cup Wish-Bone® Italian Salad Dressing.
- In a lightly greased nonstick skillet, cook chicken until heated through.
- Combine roasted vegetables and chicken with orzo.
- Sprinkle feta cheese and dill on top.
