Pimento Cheese Rice

Pimento Cheese Rice combines the flavors of pimento cheese with white rice to create a cheesy, flavorful side dish. Rice is nice to serve as a side because it is so inexpensive.

To make Pimento Cheese Rice, I started by cooking some onions in butter. I then added the rice and cooked it in chicken broth for extra flavor.

I used long-grain rice- Mahatma is my favorite.

I then stir in shredded cheddar cheese, a spoonful of mayonnaise for just a little creaminess, and some diced pimentos.

The result is a colorful, cheesy-tasting rice that would go perfectly with fried or roasted chicken.

But let’s face it. Rice can be a little lackluster. That’s why I like to add tons of flavor to it in recipes like this Parmesan Rice.

Pimento Cheese Rice

Pimento Cheese is one of my favorite southern foods and I love to use it on things like burgers, pizza, and hot dogs.

If you’re not familiar with pimento cheese, it’s really simple to make. Essentially it’s a mixture of mayonnaise, shredded cheddar cheese, and diced pimentos.

Ingredients

  • 2 tablespoons butter
  • 1/2 cup chopped sweet onion
  • 1 1/2 cups long-grain white rice
  • 1 (14.5-ounce) can chicken broth
  • 3/4 cup water
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • pinch of cayenne pepper
  • 1 tablespoon mayonnaise
  • 1 cup shredded sharp cheddar cheese
  • 1 (7-ounce) jar diced pimentos,, drained

Instructions 

  • Melt butter over medium heat in a medium saucepan. Add onion and cook until soft.
  • Add rice and stir and cook 1 minute.
  • Add chicken broth and water and bring to a boil.
  • Stir in garlic powder, salt, and cayenne and reduce heat to a simmer, cover and cook 15 minutes.

    When do you put fin the mayo, when do you put in the pimentos? Do you bake it, do you cook it?

    Did I miss something? When did you put in the pimentos and cheese? How about the mayo? This does sound extra delicious but not quite sure when to add the last 3 ingredients. Before you cook it or after?
