Ingredients
A couple of jars of alfredo sauce are used for the sauce. Sun-dried tomatoes, Italian seasoning, Parmesan cheese, and red pepper flakes add lots of flavor. At the end a bag of baby spinach gets mixed in. Not only does it add some color, but also some good nutrition.
Can I Use Chicken Thighs?
Yes, boneless, skinless chicken thighs can be used instead of breasts. They will need to cook slightly longer.
Equipment Needed
You will need a 6-quart or larger slow cooker for this recipe. I love to use the Hamilton Beach 6-Quart Programmable Slow Cooker. It is relatively inexpensive and well made.
What To Serve with Tuscan Chicken
This easy slow cooker chicken recipe is great served over mashed potatoes, white rice, or pasta with a garden salad with Creamy Italian Dressing. Pepperoncini Garlic Bread also goes great with it.
How To Store
Will keep in an airtight container in the refrigerator for 4 days. reheat in a microwave. Can be frozen for up to 2 months.

Slow Cooker Creamy Tuscan Chicken
Equipment
Ingredients
- 1 tablespoon butter
- 4 boneless, skinless chicken breasts
- salt and pepper
- 2 (15-ounce) jars Alfredo sauce with roasted garlic
- 2 (3-ounce) packages slivered sun-dried tomatoes, NOT in oil
- 1/2 cup freshly grated Parmesan cheese
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon crushed red pepper flakes
- 1 (5-ounce) bag baby spinach leaves
Instructions
- Melt butter over medium-high heat in a nonstick pan. Season chicken with salt and peppers. Add chicken to pan and cook until browned on both sides.
- Place chicken in a lightly greased 6-quart slow cooker.
- In a medium bowl mix together alfredo sauce, sun-dried tomatoes, Parmesan cheese, Italian seasoning, and red pepper flakes.
- Pour mixture over chicken. Cover slow cooker and cook on LOW for 3 to 4 hours.
- Open slow cooker, mix in spinach. Cover and cook 5 more minutes. Serve.

Can u skip the sun dried tomatoes? My store only had the ones in oil or can I get the ones in oil and wash them off then put them in?
Yes, needing to know this to! I always have sun dried Toms in oil, but never dried.
Yes, you can skip them. I think it would be fine to use the ones packed in oil and dab the oil off the best you can. I wouldn’t use a whole lot of them though or it might get greasy. Maybe cut the amount in half. You could also try adding in some diced tomatoes that have been drained.
If you do about 5 pounds of chicken will you need to add more sauce?
Yes, I would double the sauce.

HI i have a question, can you use heavy whipped cream and chicken broth instead of alfredo sauce? i feel like over the counter alfredo sauce taste so bad 🙁 i usually I make my alfredo sauce mixed with the noodles as well as whipped cream and chicken broth and cheese in a pan. lmk please
I think you might want a little more flavor than just broth and cream and the juices that come out of the chicken while it cooks will thin the sauce so keep that in mind. It should still take about the same amount of time as long as you aren’t using larger than normal chicken pieces.

Do you have a recommendation on an alfredo sauce to use? And where in the store do you find the sun-dried tomatoes? Are they in a can/jar or what? Never cooked with them before.
I usually use Bertolli alfredo sauce. My store usually carries sun-dried tomatoes in the produce section. They are in a cellophane bag. Usually in a section with dried fruits and nuts. Sometimes they are down low and not noticeable unless you are looking for them. Some stores have them on the shelf near the canned tomatoes or with the pasta sauces.
Looks like not enough liquid .does it supposed to look dry. I used fresh tomatoes and put spinach .

I don’t recommend putting frozen chicken in a crockpot. If you are pressed for time, you can defrost it in the microwave.
I put frozen chicken in the crockpot all the time. Takes a little longer but suffices.

Added fresh rosemary to mine and man was it yummy. Also used cherry tomatoes instead (just cause it’s all I had) . Alfredo was homemade
